Three Principles for Ethical Foraging

Foraging for wild foods, mushrooms, and wild medicines is something that is growing as a pastime for many people. The joy of foraging from the land connects us to our ancient and primal roots and allows us a chance to build a more direct connection with nature. But with any practice rooted in nature comes the need for balance and responsibility. Thus, the following principles can help wild food foragers and wild food instructors harvest ethically, sustainably, and in a way that builds wild food populations rather than reduces them.  I share both the principles in text below as well as graphics.  The graphics are (full size and web-sharable versions, see links) and they are licensed under a Creative Commons license.  Anyone who teaches plant walks or wants to use them in foraging, wild foods, and herbalism practice is free to download them, print them, and share them! Harvest Mindfully: Mindfully and ethically harvesting from the land to ensure sustainable harvesting, ensuring the long-term survival of wild food and medicines for the benefit of all life and future generations.

  • Take only what you need. Harvest only what you need and resist the urge to harvest everything. Find ways of preserving foods and wild medicine so that nothing goes to waste.
  • Harvest in a way that sustains long-term populations. Be careful about how much you harvest, where you harvest, and when you harvest to ensure that you are not damaging plant populations or harming individual plants. If you need to take a root harvest, it should only be done sustainably and when plants are in abundance. If you are taking a mushroom harvest, remember that mushrooms are the reproductive system; if you harvest them all, the mushroom can’t reproduce. At the same time, recognize that some plants should be harvested as much as possible–those who are spreading and harming native plant populations.
  • Harvest with gratitude and respect. recognize the gift that nature is offering you, and harvest respectfully and with gratitude. Be thankful for the plant and the opportunity to harvest.

Tend the Wilds: Our ancient human ancestors understood that creating a reciprocal relationship with nature were the only way to ensure a more bountiful harvest and sustain our lands so that they could sustain us in return. Thus, building in wildtending practices and tending the wilds should be a counter-practice to foraging.

  • Cultivate and spread wild plants. Learn how to cultivate and tend the native and naturalized plants you commonly harvest.  Work to establish new wild patches of these plants by gathering and scattering seeds, dividing and planting roots, and transplanting. Cultivate new patches which you can later harvest from.
  • Target your efforts towards at-risk plants. Look for plant populations that are in danger of disappearing (from overharvesting, loss of habitat, etc) and target your efforts to help cultivate them. This may mean that there are certain plant populations that you do not harvest until a more stable population is established.
  • Create a balance between foraging and wild-tending: Strive to balance your practices between foraging and wild tending, both in terms of working to cultivate more specific plant populations and also in terms of broader conservation and ecological work, such as protecting wildlands, replanting lands, engaging in political activism, or working with conservation groups.

Build your Knowledge: Understand the plants that you are harvesting–how they grow, how they function ecologically, and the populations of plants in your area.

  • Build your knowledge of ecology and plants. Recognize that there is a lot to know about plants and that this is a lifetime of study. The more you know, the more you are able to apply to your foraging and wildtending practice. Read books, attend workshops, and learn about how your plants function in the ecosystem: where do they grow? how do they grow? What insects/animals depend on them?  Which plants can you harvest as much as you want? Start by learning about a few plants and build from there.
  • Observe and interact.  Don’t depend on the wisdom only in books but get out into your local landscape, observe, and interact.  Recognize that the populations in your local area of plants and mushrooms may be radically different than what you read about.  Understand what is happening in the areas that you spend time in specifically so you can be more mindful of your interaction.
  • Connect, learn, and share with community.  We can do more as a community than as individuals, so find ways to connect with like-minded others, building and sharing knowledge.  The more we spread these principles and ethical foraging approaches, the more good we can do in the world.

I started teaching wild food foraging almost a decade ago after a lifetime of cultivating an ethical practice of foraging and working to regenerate damaged landscapes.  I began teaching foraging with the naive and simple premise that if people understood that nature had value for nature, they would honor and respect it, work to protect it, and cultivate a relationship with it. However, this is not the case. But with increasing frequency, as new people get into wild food foraging, I’m seeing something very different emerging: communities of people who see wild food foraging as a treasure hunt, going into areas without any knowledge of the plant populations or sustainable harvesting techniques, and pillaging the ecosystem.  And in these same communities, there is strong resistance to any discussion of limits, ethics of foraging, or cultivating reciprocation with the land.  But, this situation offers us a chance to grow and to learn how to be better stewards of the land.  With that said: what an opportunity for change. We are always learning and expanding our understanding, foraging is an opportunity for this. Be open to changing your perspective and be forgiving and understanding of yourself and others on this foraging path.

Unfortunately, in the wild food community, we see the same colonizing and capitalist attitudes that pervade other aspects of Western society. Here in North America, one of the underlying issues is that nature is treated by most people in the 21st century no different than it was treated in the 16th-19th centuries: as a resource that you can take as much as you want from. The history of colonization here in North America turned carefully cultivated food forests into deserts and destroyed the way of life and culture of indigenous peoples who lived in harmony with nature. The current practices of land ownership and individualism stress this further–the assumption is that if it’s your land, you can do what you want with it regardless of how it impacts other life living there. Many people born into Western culture are enculturated into this colonizing mindset and may not even be conscious of how much it impacts our assumptions and relationship with nature. This mindset drives a set of behaviors that are literally putting our planet–and all life–at risk. Thus, it becomes increasingly clear to me that at least some behavior surrounding wild food foraging is a new take on the very old problem of colonialism.

I’ll give three examples to illustrate the impetus for the principles I offer. When I was a child in the Allegheny Mountains, Wild Ginseng (Panax quinquefolius) was easy to find. My grandfather used to harvest it in small quantities and brew it up for us as a special treat. In the years since, with the increasing demand from China and the rising prices for American Ginseng, in all my time spent in the forests here, I have never found a single wild ginseng plant growing.  This means that the medicine of American Ginseng is completely closed to the people of the Appalachians, and it should not be. I have only had the opportunity to interact with wild ginseng that someone (myself or others) has planted. And in cultivating it, I’ve realized how incredibly hard it is to establish and grow. Most people cultivating it have less than a 20% success rate with either seeds or roots. In a second example, when a friend and I were co-teaching a wild food class, we came across a patch of woodland nettles. Some of the students in the class immediately went into the patch of nettles like vultures, taking every last nettle. Not 15 minutes before, we had had a discussion of wild food ethics and sustainable harvesting, but this was quickly forgotten with the excitement of the harvest.  That nettle patch has since regrown with some careful tending, thankfully, but it took about four years to get as large and beautiful as it was. In a final example, one wild food foraging online group in my region, a person posted a picture of six 5-gallon buckets full of ramps, including the bulbs. This represented an extremely unsustainable harvest for several reasons, not the least of which being that ramps take 1-2 years to germinate from seed and up to 7 years to mature. When I kindly shared information about how to harvest ramps more sustainably (very limited or no bulb harvests depending on the population, being mindful of the amount being taken, scattering seeds to propagate ramps), I was banned from the group for “pick shaming.”  Most online groups have very strong and immediate reactions to anyone discussing ethics, sustainability, or limited harvests, which prevent any conversations from taking place.

These three examples illustrate the challenges present with overharvesting and were part of the impetus for the above principles. I will also note that all of these examples come from the United States; I don’t know if the issues I’ve witnessed apply to other contexts or cultures.

I’ve never met a wild food instructor, teacher of herbalism, or earth skills instructor who didn’t do their best to teach at least some of the principles I’ve outlined above.  But it seems that we need to do more, particularly as large numbers of new people are picking up wild food foraging and that many online spaces are opposed to discussions of the ethics of practice. These principles can be a critical part of every class we teach, every social media post, every Youtube video we create, and every publication we author. By adhering to a set of ethical standards that put wild food foraging in the broader context of building a reciprocal relationship with nature, I believe we can create a more balanced and ethical practice for all.

Examples of the Ethics in Action: Working with Milkweed, Garic Mustard, and Oak

Here are three specific examples how this might be done, both from a teaching standpoint and from a practitioner standpoint:

Common Milkweed (Asclepias syriaca) is one of my favorite wild edible plants, with four different harvests throughout the season. A wild food foraging practice that includes common milkweed has a chance for causing harm. Overharvesting shoots can prevent the plants from growing at all; overharvesting flower buds, immature seedpods, or silks can prevent the milkweed from going to seed and spreading.  In most areas in the US, common milkweed is in decline due to new farming techniques, spraying, mowing, and land-use changes. Thus, our land needs a lot more common milkweed, which is a critical food source for declining insect populations, including the increasingly endangered Monarch butterfly.

When I teach common milkweed, I start by passing out small packets of common milkweed seeds that I have grown in my garden from local seed stock.  I tell people about what a wonderful wild food that common milkweed is, how good it tastes, and how to prepare it.  And, I ask that people work to cultivate their own patch (in their garden, yard, or in a wild area) so that they can eventually start harvesting it themselves.  I explain that I do not, ever, harvest this in the wild but rather, I cultivate new patches and eventually return to them to harvest. In this example, I teach Common Milkweed in context: not only what it is but how to harvest, but the challenges surrounding it.  And, I put the direct tools for change–seeds–in their hands, so that they can spread them and begin their relationship with milkweed from a place of reciprocation and stewardship.

Garlic Mustard (Alliaria petiolata) is another plant I commonly use and teach.  The lesson of this Garlic Mustard is a very different one: Garlic mustard is an opportunistic plant (I avoid the term “invasive”, also for ethical reasons) and by harvesting, we can control the populations of this plant.  Because it is always abundant and opportunistic, not only do I teach this plant, I encourage those on my plant walks to harvest as much of it as they can while we are on the plant walk.  I will sometimes bring a garlic mustard pesto or another dish that they can taste to see how delicious it is.  On social media, I will share recipes and information on how to find it and cook it, so that others can also start harvesting this plant abundantly.

Oak (Quercus Rubra, Quercus Spp.) is another one of my favorite trees from a foraging perspective. When I teach oak in the fall, I usually bring a sample of acorn bread or cake so people can get a sense of how delicious the oak is.  This helps people recognize and honor the oak tree as such an abundant resource. We discuss the principle of the “mast year” and how you can harvest acorns. We discuss how to identify good acorns to harvest based on examining their caps and shells.  We do talk about how much one can reasonably harvest and process–and how to leave acorns for wildlife.  I also teach wildtending practices with Oak in two ways: first, I encourage them to be like a squirrel, not only harvesting acorns but, after harvesting, taking a stick and popping some of them back into the ground to propagate the oak.  I also encourage people to return to their favorite oak in the spring and dig up some of the small oak seedlings to spread elsewhere, ensuring the genetics of the tree survive.  This creates a balanced relationship with the oak, and helps repopulate a keystone species in our bioregion.

In all three examples, I’ve developed both a teaching and foraging practice based on examining the specific context in which a plant or tree grows, its abundance, and the ecological needs it has.  In the case of Milkweed, declining amounts of milkweed (including in my immediate ecosystem) have led me to cultivate it in a number of places, spreading those seeds outward, and considerably limiting how much milkweed I enjoy eating.  The case with Garlic Mustard is the opposite–I harvest and eat as much of it as I can as a way of limiting the spread.  One of the practices of the oak is to participate in acorn planting and spreading oak trees.  Each of these wildtending practices allows me not only to ethically balance a foraging practice but to create a deeper and more meaningful relationship with the living earth.

Sacred Trees in the Americas: Juneberry Tree (Amelanchier spp., Serviceberry, Shadbush, Sasakatoon) Medicine, Magic, and Divination

We are now at the time when it is at peak throughout the Eastern US and thus,it is a great time to learn about this wonderful tree. Juneberry, also known as Amelanchier, Serviceberry, Saskatoon, or Shadbush is a grouping of 20 deciduous small trees or large shrubs. Juneberry is a delightful understory tree or shrub that is widely loved and sought out among the Appalacian peoples here in Western PA and across the midwest and the southeastern United States.  I remember a warm summer day a few years ago when the Juneberry pickings were quite good–I and two friends made our way to a local park, where we gorged ourselves in delicious berries and picked over four gallons–with so many berries still left on the tree.  The next few days we enjoyed the berries fresh, canned them into jam, baked them into pies, and just were in awe of the abundance of these delightful trees.  Today, I would love to share this abundance with you and explore the ecology, lore, magic, and mystery of the delightful Juneberry tree!

Juneberry is often found as a large shrub or small tree, appearing anywhere from about 6 feet tall to up to 25-40 feet in height with a trunk no larger than 6-12″ in diameter. According to Linda Kershaw in Trees of Michigan, while it is easy to identify the Juneberry species, identifying the specific subspecies can prove very difficult or impossible due to hybridization (I’ve found this to be the case as well!). In fact, some scientists aren’t clear if Juneberry is one species or 20! Because of this, I am going to discuss the Juneberry/serviceberry species as a whole, with special attention to those that are common in the US Midwest and East coasts. Most of my experience comes from Smooth Serviceberry (Amelanchier Laevis) and Appalachian Serviceberry (Amelanchier Canadensis) which appears as a small understory tree throughout the Alleghenies as well as various ornamental cultivars that appear more like shrubs in urban and suburban settings.  And these are the two places you will find Juneberry–taller understory trees in forests throughout its range as well as urban cultivars in housing developments, on campuses and in parks.

The Juneberry has distinctive bark that is smooth, gray, with thick and darker vertical lines.  Once you learn to ID it, it is very distinctive from other trees you might encounter, making it fairly easy to identify even in the winter months.  They are slow-growing and relatively long-lived trees. The serviceberry can grow in a number of different conditions, with the exception of very wet areas or wetlands. It prefers drier soil, and so you are more likely to find it higher ground/uplands, etc. For example, in my region, the area that I know that has lots of Juneberry is our Gallitzin State Forest–this is literally the highest point in the county, on top of the Babcock ridge in the Allegheny Mountains at 2600 or so feet.  The Juneberry trees grow up and down the mountainside; you won’t find it in the damp valleys with the Eastern Hemlock or Witch hazel, only on the sides and peak of the mountain.

Juneberry tree produces 5-petaled flowers that are really beautiful in very early spring.  The flowers here often come out before leaves are on any of the trees (another characteristic of the understory trees–they take advantage before the overstory covers everything up).  If you are seeking out serviceberry for the first time, this is probably the best time to find as it is really easy to spot the flowers when the rest of the trees are still pretty bare.  Look for little clusters of white flowers. Once the flowers are gone, you can look for the fruits which go from green to red to deep purple that droop in nice fat clusters, or to the alternately-placed leaves with a tiny tooth edge ridge that is oblong and the smooth bark.

John Eastman notes in The Book of Forest and Thicket that Juneberry is particularly susceptible to gypsy moth damage as well as the destructive gymnosporanguim rust. This rust is hosted by Juniper / Red Cedar (Juniperus Virginia) and when it travels to a Juneberry or apple tree, it creates swollen fruits and distorted twigs that have powdery fungus. It’s a real disappointment to see your favorite serviceberry tree covered in this stuff!

A variety of wildlife enjoys the fruits including, according to Eastman, 22 different bird species – Cedar waxwings, gray catbirds, hermit thrushes, and northern orioles, to name a few. Beavers, foxes, red squirrels, bears, and white-tailed deer also enjoy the berries, fruits, bark, and foliage.

Food and Edible uses

The most important thing to understand about the Juneberry is that while the berry tastes kind of like a watery blueberry when fresh, cooking transforms its flavor into an incredibly delicious, rich, cherry-almond flavor that is hard to describe. Juneberry jam is one of my favorite jams because it is so delicious and unique!

In my experience, the challenge with finding these trees in the forest is that there is no way of reasonably picking the berries.  You can gather from what drops to the ground, but often that amounts only to a few handfuls.  I have had much better luck foraging these delicious berries in suburban and urban environments. My favorite harvest spot at present is at a local park where they have dozens of bushes planted as an ornamental!  Of course, with any foraging, please make sure you practice reciprocation–do something in return for nature, ask permission, and make offerings before you harvest from the tree.

In Edible Wild Plants of Eastern North America, Rollins notes that Juneberry was well esteemed by both early European explorers and Native American tribes. Native Americans would gather the berries, beat them into a paste, and dry them into cakes. The dried berries were then mixed with cornmeal and used in old-style puddings. Further, John Eastman notes that the berries were one of the primary fruits included in traditional pemmican–a mixture of dried meat (often venison or bear), fat, and berries that offer high calories and fat. In Medicinal and Other Uses of North American Plants by Charlotte Erichsen-Brown, a range of indigenous uses of the berries are described, including how the Iroquois would ferment dried Juneberry, sugar, and water to make a refreshing drink (noted in 1916). The Chippewa found them so refreshing that the term “Take some Juneberries with you” was a common expression to be told to relax.  Many tribes dried the Juneberry for eating in the winter months and used it for various winter food applications.

Other Human Uses

The wood of the Juneberry is very heavy, hard, strong, and close-grained.  It has a dark red-brown appearance with lighter colored sapwood.  Today, it is a favorite wood of spoon carvers and, in larger pieces, it is good for wood turning. Erichsen-Brown notes that the wood was used to make arrow shafts and pipe stems by indigenous peoples, particularly because it was so hard.

Eastman notes that the Juneberry has traditionally been used as a seasonal clock widely in North America, and he indicates that no other tree has quite this feature. In Colonial times, the blooming of the Juneberry was used by fishers to know when the spawning of shad fish happened (hence the common name “shadbush” given to the tree).  The term “serviceberry” also was noted to mark the time for burial services for people who had died over the harsh winter (from cold, starvation,etc). Today, we can also see the timing of the gypsy moths from this tree.

Like my other understory trees, the Juneberry does not get much notice or love from traditional western herbalism or occult communities.  All of my usual sources I consult do not have entries for the serviceberry, which is unsurprising.  I also cannot find references to this tree in any modern herbals (and I own many!)

Most of what I have found about herbal uses comes from the work of Erichsen-Brown.  She notes that the roots and bark were traditionally used by some tribes as medicinal tonics. Medicinally, Erichsen-brown notes a number of uses being tied to women’s health, particularly surrounding pregnancy. The Chippewa combined the bark of Juneberry was combined with that of pin cherry, chokecherry, and wild cherry decocted and drank for feminine issues (p.167). She notes that the Ojibwe used the bark also for an expecting mother, while the Iroquois used the fruit to treat post-childbirth pain and hemorrhage.  I haven’t been able to find much in discussion of Juneberry in modern herbals, but it is clear from Erichsen-Brown’s work that this tree is traditionally connected with women’s health.  Plants for a Future lists a few additional uses, including being used in the treatment of snow blindness, use for a spring tonic, and astringent qualities.  Since Juneberry is in the rose family, these last two certainly fit!

The Magic and Divination of Juneberry

Time and keeping natural time.  The folk and traditional uses of serviceberry as a “natural” clock as well as its slow-growing and long-lived nature obviously lend this tree well to being tied to any issue dealing with time, particularly when things need to happen or should happen at a certain point.

Cycles. Tied to time as well as to the herbal uses of serviceberry, we have the idea of cycles, including cycles of the moon, the sun, our own human cycles, and the seasons.  Serviceberry reminds us that everything moves in a giant circle around the sun and the cycles of the seasons continue to spiral ever-forward.

The magic of naming.  This is a tree that carries a number of different names, and I think the names are important.  I originally called this berry by its most common name, “Serviceberry” thinking that the berry and tree were always “in service” to others. But in doing deeper research on this berry, and finding that the service referred to a funeral service, the name lost its magic.  So I shifted to calling it by the other name I had heard as a child–Juneberry.  You have a choice with names–and this berry reminds us that we can be named by what we are associated with or surrounded with.  It reminds us of the power in a name–what it can teach us about the world.

It’s no secret that it’s extremely hard to practice any nature-based spirituality in an age where the destruction of nature is a product of daily human activity.  The deeper that you go into any path of nature spirituality, like Druidry, the more you experience this dissonance.  How do we practice nature spirituality when we are experiencing ecological decline: extinction, pollution, global warming, ocean acidification, deforestation, and much more? Seeing news reports and dealing with ecological issues in our own region and communities can leave people feeling lost, confused, and stuck in a place of inaction. People come to paganism, Druidry, and nature spirituality because they want to reconnect with nature. But in the process of doing this, they also struggle with the integration of spiritual practices with their everyday lives and balancing their lives with the harsh ecological realities we face. As we are increasingly confronted with the catch-22 of holding nature as sacred but participating in a culture that is harming nature and threatening ecosystems globally, the question that so many of us ask is: how can I integrate an earth-based spiritual practice with an earth-honoring lifestyle?

To address these challenges, I wrote Sacred Actions: Living the Wheel of the Year Through Earth-Centered Sustainable Practices.  What is sacred action? Sacred action is the principle through which we can solve the challenges I’ve shared above.  Recognizing that everyday, mundane life can be an opportunity for deepening our spiritual practices and connections with the living earth by living in a way that honors nature through those everyday actions.  It is the process of transforming our lives, through our intentions and action, where we turn the mundane through a wide set of new practices, skills, and activities.  It’s about taking small steps towards a brighter future.

For years, as part of my own path, I explored a wide range of practices and worked to integrate my own path of druidry into my everyday life by learning sustainable living, organic gardening, permaculture, herbalism, and so much more.  In time, I learned to teach these things to others, organize community groups, and start to spread the word further. I have written the book to be accessible to anyone, regardless of their living circumstances, resources, or life path.

Book Overview

Sacred Actions offers a wide variety of sustainable living activities, rituals, stories, and tools using an eight-fold wheel of the year approach. Thus, this book is a synthesis between nature-based spirituality and sustainable living practices through explorations of a wide variety of topics.  Each chapter, tied to one of the eight holidays, offers a specific theme, rituals and activities for sustainable living, stories, and fun graphics.

One of the core aspects of the book is that I use permaculture ethics (people care, fair share, and earth care) to weave through the book. People care focuses on making sure ourselves, our families, and those around us have their basic needs. Earth care focuses on attending to sustaining our earth and all life on earth through our own actions. Fair share focuses on taking only what we need so that others may have what they need too.  Through the presentation of these ethics of care from permaculture, we are able to re-see a number of everyday life practices through the lens of sacred action.

The eightfold wheel of the year is the framework through which I present stories, practices, rituals, activities, and much more with the goal of helping readers further practice sacred action. The book begins at the Winter Solstice, where I offer core rituals and activities surrounding an ethic as care as a core foundation of sacred action using permaculture’s three ethics of care as a foundation of the book: people care, earth care, and fair share.  At Imbolc, we focus on the principles of drawing upon the wisdom of the ancestors through reskilling and knowledge building.  At the spring equinox, I present one of the most challenging topics: addressing consumption, materialism, and waste, and I show many alternatives to typical living such as worm composting, ecobricks, and spiritual tools and rituals for various kinds of spring cleansings.  Beltane focuses on our homes and everyday lives–exploring sustainable options for cooking, heating, water usage, cleaning, lighting, and so much more.   At the Summer Solstice, we think about the energetic and ethical dimensions of food, developing seasonal food rituals, and honoring the land through our daily eating choices.  At Lughnasadh, we explore sacred gardening, planting by the signs, growing food indoors and outdoors, lawn conversions, and so much more (this is my favorite chapter, haha!).  At the fall equinox, we explore how to take things into our community: in our workplaces, creating and organizing groups, transportation, rituals and tools for our broader action in the world.  Finally, at Samhain, we explore how to create more sustainable ritual tools and working with nature outside of our door.

I remember when I first spotted to Wild Grape patch from the dirt road. “Is that all wild grape?” I said to my friend in an excited voice. We pulled the car over, and sure enough, there were thousands of grape bunches on a patch of vines that stretched hundreds of feet, almost ripe. A week later, we came back to the spot with a larger group of friends–there were more than enough wild grapes to go around.  After giving thanks for the abundance and promising to return to the spot for some wassailing in the winter, I harvested almost 5 gallons of wild grape that day. We worked to press all of the wild grapes with a friend’s with a small fruit press, and converting those grapes into the most amazing jelly you ever tasted!

Wild Grapevines, most commonly on the US East Coast the Fox Grape (Vitis Labrusca) variety, are truly a wonderful vine to get to know. They offer a variety of wonderful fruits with medicinal and culinary uses, a whimsical and sacred presence in our forests, and important spiritual lessons to learn. Like apples, pears, and other stonefruits, humans have an extremely longstanding and healthy relationship with grapes.  This is, in no small part, the role of wine and other fermented beverages in human history.  Before we had modern medicine, the wine was not considered simply an alcoholic beverage but also an important medicine. Grapes, their fruit and leaves, are also an important food source.In today’s post, we will explore the incredible grapevine!  While I’m focusing my comments on the most common grapevine along the US east coast, Vitis Labrusca, the fox grape, or wild grape, you can apply the content of this post to all grapevines.

Grapevine Ecology and Growth Habits

Fox Grape is widespread along the US Eastern seaboard, from Nova Scotia to Georgia, and its range stretches through most of the eastern half of North America to the Mississippi.  Because of this, it is quite easy to find Fox Grape in foraging adventures, and when found, it is often abundant (although not always easy to reach if it is growing high up in the trees).  Fox grape, like other grapevines, is not a freestanding tree. Rather, it depends upon the support of other trees, most often in a symbiotic relationship, where the grapevines are growing with other living trees.  However, over time, the vines can strangle the trees, eventually pulling them down. You might see places like this in the forest–it often appears as a U-shaped bowl where thousands of grapevines are growing up the trees–and the center is a mass of grapevines that have pulled down smaller trees and continue growing outward.  Several other growth habits I’ve witnessed include wild grape taking over an abandoned pile of wood (imagine a very large brush pile covered in wild grape) or a huge amount of wild grape on the edge of a field/forest, taking up much of the edge space. Most commonly though, you will find a grapevine here or there, often climbing up into the host trees.

The woody vine of the wild grape is usually 10-40′ long with a base of several inches and up to 12″ in diameter for the oldest vines.  It uses forked tendrils (also edible) to slowly climb up adjacent trees where it uses its tendrils to anchor itself to branches and continue its ascent.  The bark is medium brown and usually appears shredded, with some of it flaking off over time as the vine grows in girth.  At regular intervals, the vine will have nodes where stems come out to produce leaves. The leaves are alternate and heart shape with three palmate lobes.  In the late spring or early summer, the wild grape will produce greenish-yellow bunches of flowers–they aren’t very showy, and it Is usually easy to miss them. The flowers slowly develop into green grape clusters and then, in the late summer or fall, the 1/2″ – 3/4″ grapes ripen to dark purple or bluish-black. Of course, this is the time to go foraging for wild grapes!

Wild grapes grow in a variety of soils and tolerate a range of conditions, but they prefer wetter conditions and have some flood tolerance.  They usually thrive in part sun conditions, and as they climb, they bring themselves into more sunlight, sometimes blocking out the light of their host tree.

Wild Grape History

The Fox grape has an interesting history. It is likely that in the 11th century when Leif Erikson and the Vikings were exploring coastal North America, they named the land they saw as “Vineland” because of the numbers of grapevines present.  Fox grapevines along with other Vitis species were later exported to Europe during the 19th century.  However, all North American grapevines carry the phylloxera louse that devastated many of the Vitis vinifera  (European) varieties of grapes but that the American varieties are immune to.  Europeans eventually overcame the phylloxera by interbreeding Fox grape with native European grapes to build resistance.  Thus, most of the grapevines in the world have a bit of Fox Grape in them.   The Concord grape was also bred from the Fox Grape in the 19th century in Concord, MA and after that other varieties such as the Niagara and Deleware were developed.

Wild Grape as Food

The Fox Grape is a very potent red grape variety, which has a skin that can be easily slipped off, offering easy access to the grape flesh and 4-5 small seeds in the center. According to Winker, Cook, Kliere, and Lider from General Viticulture (1974), the fox grape is known as “fox” because it has a strong, musky aroma that is earthy, sweet, and quite unique. These features make it highly sought out as a wild food.

In Native American Food Plants: An Ethnobotanical Dictionary, Daniel Moerman describes the widespread uses of wild grapes by a variety of Native American tribes for food.  This included eating the fruit raw, using the fruit to make juice and dumplings, drying the fruit into raisins, and more.

Today, as traditionally, wild grapes are used as a food source in a number of ways.  First, the small forked tendrils coming out of the vines are good for a trailside nibble–they are tart and fresh tasting (you could never gather many of these without harming the vine, so enjoy a few as you hike but don’t consider this a major food source!)

The leaves are a culinary delight: they can be steamed or marinated in oil and then used to make dolmas, casseroles, or other dishes calling for grape leaves.  You can preserve them in oil or even parboil and freeze them if you want a ready supply of grape leaves into the winter months.

Of course, the prime food source from the grape is the fruit itself.  In the late summer or early fall, keep an eye out for wild grapes that are ripe. Confirm that they are wild grapes (both poison ivy and Virginia creeper can produce a look-alike, identify the difference between the leaves and the size of the fruit). Usually, wild grapes stay on the vine a number of weeks if the wildlife doesn’t get to them first, giving you a long harvest window. As Sam Thayer in the Foragers Harvest notes–and this is important–when you are harvesting, you either need to process your grapes right away or ensure that you do not crush them. The grapes will immediately begin to ferment if crushed (as grapes do!). When you crush them, crush them gently because the seeds can be bitter and that bitterness can be transferred into the grape juice if the seeds are crushed.  Thayer notes that a small fruit press or jelly bag is good for this work–I’ve also found you can step on them in a clean bucket with clean feet!  Return any seeds or unwanted materials to the living earth.

One of the most important things to know about harvesting wild grapes, at least the Fox Grape variety, is that they contain a compound known as tartrate (a salt/esterate of tartaric acid, found in all grapes but high in wild grape). Different vines have it in larger or smaller amounts, in my experience.  After crushing, make sure you wash your hands thoroughly or the Tartrate can start to make your hands burn after about 45 min to 60 min.  After you have your juice, put it in the fridge or a cool porch for 24 hours in a large jar.  You will see a gray-brown sludge form at the bottom (usually about 1/4 to 1/3 of the total volume).. Pour off everything that isn’t the sludge and discard the sludge in your compost or outside (it is important to return any “waste” to nature.  If you don’t pour off the Tartrate, it will provide an “off” taste to your finished juice (or any fermented products you make with it).

What is left is an amazing, very potent, and delicious grape juice.  You can mix it with other juices (it goes well with apple or pear), ferment it, make a jelly, drink it fresh, or anything else. At this point, you can use any recipes you want for those calling for Concord or Niagra grapes.  My favorite thing to do with it, since I don’t drink alcohol at all, is to turn it into the most incredible jelly you will ever taste!  A fruit leather (fruit roll-up) is another excellent use, especially when combined with another fruit like ripe pureed apple.

Wild Grape as Medicine

It’s important to remember that before modern medicine, wine (particularly red wine) was considered as much a medicinal substance as it was a culinary one. Due to the reservitol, which supports healthy heart function, wine has long been used as a medicinal drink and health tonic in many cultures.  As Matthew Wood describes in his Earthwise Herbal: Old World Herbs, herbs were often macerated (soaked) in wine, and then it was diluted with honey and water for medicinal use.  As Wood notes, in the late Middle Ages, distillation techniques invented which allowed wine to be turned into spirits, creating an even more potent medium for tincturing herbs. Wood notes several other historical uses of grapes including liquid drops from living grapevines being used on the eyes to help heal eye issues and the grape leaves (which are astringent) were used to address a variety of wet or damp stomach conditions.

Wild Grape in the Western Magical Tradition: Europe and the Americas

Vine or Muin is associated most commonly with grapevine, although grapevines are not native to Ireland, where the ogham associated.  Still, many contemporary uses of Muin tie it to the wild grapevine (I use it in the Allegheny Mountain Ogham as well). In Celtic Tree Mysteries, Steve Blamires notes that the word Muin is tied to the “highest beauty and strongest effort” in the ancient texts, suggesting that vine grows from tree to tree, connecting the forest, which offers one key interpretation of vine through the ogham (p. 147).

In the American Hoodoo tradition as described by Cat Yronwoode in Hoodoo Root and Herb Magic, the grape is used for revealing adultery revealing spells and also for a very specific kind of curse lifting. If a man has difficulty urinating due to a curse, a rootworker cuts a grapevine to the height of his crotch and then bends it in a glass jar and lets it sit overnight. This will produce a liquid.  He should wash his privates with this liquid, which will cure him of the curse.

In The Encyclopedia of Natural Magic, John Michael Greer notes that grapes have been considered magical substances by humans since before we had recorded history.  The ancient Greeks called the grapevine the “blood of the earth” representing their critical importance.  JMG notes that grapes are tied to the Sun in Pisces and are airy and warm in the 1st degree, moist in the 2nd degree. While grapes were used traditionally in love magic of all kinds, JMG notes that grapes are excellent at carrying the energies of other herbs or substances, which is part of why wine can be the base for many potions, baths, and washes (p. 115).

The Chickasaw Legend describes the Raccoon Clan, a clan of bright and well-adapted people, hanging large bunches of wild grapes up to dry for the winter months. In the History and Traditional Lands of the Huron-Iroquois Nations, the tale describes a large bridge constructed by the Iroquois over the Ohio river which broke after several explorers attempted to cross it. In a similar Senaca legend, the Lazy Man makes a grapevine swing and hangs out in his swing all day rather than doing anything productive like hunting. In The Origin of the Iroquois Nation, the spirits of the sky came down and gave each of the five Iroquois nations a gift. To the Onondaga were given grapes, squashes, and tobacco.  In a final Senaca legend, the Adventures of Yellowbird, at one point Yellowbird, who is a shapeshifter, is summoned by a neighboring chief.  In animal form, he runs to meet her but is stopped repeatedly by an invisible tangle of grapevines.  He knows these vines were put in his way by the chief.

The Magical and Divination Meanings of Wild Grape

Binding and Holding Fast. The first meaning of the wild grape is due to the very nature of grapevine–as vines grow, they grow around other trees and plants, in some cases, strangling them and pulling them down over time.  even the small tendrils can cause great difficulty to living plants.  This meaning is clear, both in the ecology of the plant as well as in some of the legends surrounding the plant.

Transmission of energy. Just as the grapevines connect multiple trees and the wine can be used to transmit the qualities of herbs, the grapevine as a whole offers a transmission of energy and is a worthy vessel for any sacred sacrament – herbs, magic, and more.  Wine is a carrier, it can help carry sacred energies of ritual and more.  You might consider how vine can be used as such a transmission source in your own practice–through the wood, through the leaves, or through food and drink that you create.

Ode to the Oak: Acorn Harvesting, Preparation, Acorn Breads, and More!

With the cooler temperatures of September and October, the abundance of the Oaks come forth.  In my area, we have abundant oaks of a variety of species: white oak, chestnut oak, eastern red oak, swamp oak, and much more.  Each of these oaks, every 2-3 years, produces an amazing crop of nuts that simply drop at your feet. Acorn was once a staple food crop of many different peoples around the world–and in some places, it still is.  Here in North America, acorns and chestnuts were primary food sources for native American people. Cultures subsided–and thrived–on annual acorn harvests and the bread, cakes, grits, and other foods that can be made with processed acorns.  I really enjoy processing acorns and using them as ritual foods for both the fall equinox and Samhain.

Thus, in this post, we’ll explore the magic of the acorn, how to process acorns (through several methods), and a few recipes that you can use to create special foods from acorn flour. Because a small amount of acorn flour takes quite a bit of time and effort, I see it as a “special” food that can be integrated into feasts, celebrations, and more. I prefer to create enough acorn meal to enjoy for a ritual meal for both the Fall Equinox and Samhain.

Healing Harvests and the Sacredness of the Oak

Almost anywhere you live in the world, you are likely to be able to find one or more species of oak tree. Most areas of the world have some oak (Quercus) species, here in North America, we have over 50 varieties that vary quite considerably across bio-regions. The sacredness of the oak has been known across cultures and peoples–for more on the magic and medicine of the oak tree, you can see this post.  ALike most other hardwood nut trees (hickory, walnut, butternut), oaks are relatively slow-growing and long-lived; white oaks (Quercus alba) can live 600 years or more. Given the beauty and majesty of oaks, it is certainly not surprising that the ancient druids revered the oak, and the term druid literally means “oak knowledge.” Within the druid traditions, oaks are tied to wisdom, knowledge, strength, power, and grounding.  By harvesting the oak and learning to work with the acorns, you can deepen both your connection to this wonderful tree, rediscover a fantastic food source, and honor the ancestral traditions of many cultures and peoples.

A single well-established oak tree can drop 500-2000 lbs of acorns in a single year (according to the delightful Acorn and EatEm book from the 1970s), depending on the size of the tree, the size of the acorn, and the variety.  It happens to be a mast year here and a single 300+-year-old Eastern Red Oak here on our property is dropping many more acorns than I–or any squirrel population–can harvest and eat. The oak has dropped acorns for the last month, and they are covering the ground so much that you can’t even walk without crunching them under your feet (even after I’ve harvested about 40 lbs to process).  It’s incredible to see how much bounty can come from just one tree that produces year after year and offer. And as a perennial, you don’t have to maintain a field or garden bed, plant seeds, or tend crops. All you have to do is harvest and process the acorns (which still takes some work) and you have a wonderful and magical food source.

Mast Years and Abundance

One of the important things to understand about acorns and harvests is understanding that oaks do not produce equal numbers of acorns each year.  Every 3 years, oaks have a very large harvest, called a “mast” year.  This is an evolutionary adaptation–if oaks produced huge harvests of acorns each year, the rodent population would get out of control and all of the acorns would be eaten.  By having a mast year every 3 years, squirrels and chipmunks will harvest many, bury and forget many, and eat quite a bit.  Typically, all of the nut-bearing trees (oaks, chestnuts, hickories, butternuts, walnuts) will produce mast in the same year in a local area, so it is likely you will have years of plenty and years where there aren’t that many to collect.

On Slow Time and Cracking Nuts

Before we get into the process of actually harvesting and preparing acorns, I want to provide an overview of this process and a discussion of time.  Acorn processing is not fast. You should not be rushed or in a hurry. This is a deep practice where you invest a lot of time and energy to learn more about the oak and cultivate a relationship with the oak. This is slow food and this is slow time.  This is honoring and deepening our practice, learning the oak in a deep way, and taking time to simply be part of the experience.

The basic process is this: gather acorns, crack the acorns and shell them, loosely chop them up, remove the tannins from them, grind them into flour (or keep them as grits) and cook.  From start to finish, you are looking at anywhere from 1/2 a day to several weeks, depending on the leaching method you used.

I did some calculations on one of my recent harvests to help share the time it takes so you can be prepared.  I am working primarily with Eastern Red Oak acorns, which are medium-sized acorns with a high fat and tannin content (which means longer shelling time and longer leaching time).  It took me 2 hours to gather 2.5 gallons of acorns, doing minimal checking, and sorting.  It took 30 minutes to sort bad nuts which left me with 2 gallons of acorns. Cracking and shelling represents the largest expenditure of time: 4 hours for 2 gallons of nuts, using a nutcracker (I would budget 5-6 hours for this if you did not have a nutcracker).  Cracking my nuts with the Davebilt Nut Cracker took only 20 minutes (which included setting up the nutcracker, wiping it down, cracking the acorns, and putting the nutcracker away). Investing in a nutcracker like this, even with some friends, is a really good idea if you are going to be doing this every year or processing more than a gallon of acorns.  Shelling is by far the most tedious process, this took me 2 hours to shell two gallons.  Leaching can go anywhere from several hours to several weeks, but a lot of that is waiting time, but I’ll budget 15 minutes a day to cold leeching methods.  Grinding your acorns will depend on your method.  I am using a small hand grinder (a Victorio VKP1024 hand crank grain mill), which takes about 10 minutes per cup to process (I grind them as I use them to preserve freshness).

So, all in all, the actual work time to gather and process 2 gallons of acorns is about 7-9 hours.  Two gallons of acorns resulted in 7 cups of dried flour (which is a sizable amount to work with). This represents the actual physical expenditure of time, spread across however long you are leeching the acorns.  If I was working with larger acorns with less tannin, the time would be less.

While this may seem like a lot of time,  remember that the acorns are abundant, a gift from the land, and creating acorn flour is a kind of extended conversation and communion with the oaks. Through this process, you are not only learning more about the acorns, but you are developing a deeper relationship with the oak and bringing that oak energy into your life.  Acorns are a gift from the land; you only have to gather them and process them.  You don’t have to sow them, till the soil, water, or anything else.  So while the processing time at the end of the season is considerable, it is all at once, and you are getting as many acorns as you want for free.

Harvest Timing. The best time to harvest is when you see green acorns covering the ground and when they are dropping from trees. Usually, for where I live (Western Pennsylvania, USA) this is the month or so around the Fall Equinox.  You can harvest them later in the season, even well into winter.  The nutmeats often dry out at that point but they are still good and are easy to crack.

Weevils and bad nuts. When you go to gather, it is important to know the difference between a good acorn and one that may contain a weevil or be rotten. Thus, before you put the acorns in your lovely forest basket, do a quick check for signs that a weevil might be present.  You’ll see this either as a large exit hole (the acorn weevil already left) or as a mark on the acorn that appears someone went into it earlier (usually a small black dot, looking like someone marked it with a black pen).  Leave any acorns with a weevil in the forest.  You can also look for other signs that the acorn may not be healthy–if it doesn’t have a whole shell, mold or discoloration, etc.  Acorns usually drop from the tree green and then turn brown, so you may see acorns in different phases of green and brown, and that is natural.

After you come back home, I recommend letting the acorns sit for 7-10 days.  This will make them easier to shell and allow any weevils you missed to come out.  I try to set up my acorns so the weevils can crawl and enter the ground on their own. If you have acorns in a box lid, the weevils won’t be able to get to the ground and die.  In that case, I feed them to my chickens.

You don’t have to wait–you can crack them and use them fresh. Expect to see some weevils still in the acorns as you work.

Sorting your acorns.  After you’ve let them rest (or not), you can do one final sort of your acorns.  I like to just lay the acorns out on a blanket and look at each one.  If its too light, discolored, or has a clear weevil hole, I return those to the land, and the rest I crack and shell.  For another method,  you can also use water to help you sort. Fill a bucket with water and put your acorns in the bucket.  Good nuts will sink (indicating that they have a good nutmeat) while bad nuts will float to the top.  You can also lay them out on a blanket and let your goose helpers sort for you.  An alternative to all of this is just to lay out your acorns somewhere and wait for the weevils to come out–they usually emerge within 3-7 days of an acorn dropping to the ground.

Cracking and Shelling Your Acorns

Processing acorns is mindful work–it requires patience and, preferably, some friends to sit around and do it while you all talk.  Most natural food preparation is similar–we have to invest the time to get the rewards of unique and wonderful foods. An evening cracking and shelling acorns will be richly rewarding, indeed!

Cracking and shelling acorns is an art form.  You will find that different acorns may require different methods–some are very easy to crack and shell, while others can be tricky.  For my Northern Red Oak acorns, I prefer to let them dry in the sun for about two weeks (allowing any weevils I missed to emerge) and then sort them once more before cracking.  If they have dried for 2 weeks, they are more likely to shell more easily than if they are fresh from the tree.  What I suggest is try shelling some of your acorns green and others a little later and see what works for your specific variety.

Hand cracking.  For a long time, I used a method described by Sam Thayer in his Forager’s Harvest book. This involved lining acorns up on a hard surface and using a wooden round post to crack them in a line.  It worked quite well.  If your acorns are very fresh and the skins aren’t too thick, you can also cut them open with a knife.  I am way too much of a klutz to use this “cutting” method but it may work for you.  A mallet also can work (I prefer a wooden

mallet to a metal hammer)  For Northern Red Oak, you can stand them up on the end and then use a light tap with a wooden mallet to crack them open.   As I mentioned above, my current cracking method of choice is a Davebilt nutcracker.  It is a fabulous tool and cuts several hours out of cracking.  I would only invest in something like this after you’ve committed to a yearly acorn practice and planned on doing larger amounts of acorns.

Once your acorns are cracked, it is time to shell them.  If you have a nutpick, this is ideal.  Any metal tool that can help you dig into the shell and pull out the nutmeat is useful here.  I strongly recommend you use a dull tool or you will invariably stab yourself.  As you shell your acorns, pay attention to how the nutmeats look–you want nutmeats that are white or cream-colored (when fresh) and intact and light brown (when dried).  If you see nutmeats that are wormy, black or dark gray in color–those aren’t good and you want to return those to the land.

Leaching the Tannins

Oaks and acorns have something called “tannic acid”; this is what makes the acorns bitter and makes your mouth pucker when you eat them. Obviously, to make acorn treats, you’ll have to remove the tannic acid or they won’t be palatable. Native Americans would place them in a stream with running water. Today, most of us simply leech them using water and jars or on the stove.  I’ll share several methods here that have worked for me.

If you are working with fresh acorns, you can proceed right to chopping them up.  If you are working with dried acorns or even those that are partially dried, I suggest soaking them overnight before proceeding.

After pulling out the nutmeats, I sent them through my food processor to get a rough chop.  You can also do this by hand but it would take a while (i’d probably do it dried in a mortar and pestle if I was doing it by hand).  To use the food processor, put a handful of nuts in your processor and then add water.  Process till they are finely chopped.  You’ll notice that the water is quite milky.  This is a good thing: that’s the acorn starch (which can also be saved).

Pour off the acorn starch and put it in your fridge.  In a few hours, it will settle in the jars.  You will leach this just like the rest of your acorns.  Acorn starch is a thickener and can be used just like cornstarch.  What you are left with are chopped up “acorn grits” which then you work to leach to create a palatable and delicious food.

Chopping up the acorns to make acorn grits is important.  If you try to leach your acorns whole, they will take a really, really long time.  The grits are large enough not to go through a strainer but small enough that they have maximum surface area to be exposed to the water.

Now you have a choice of how to leach: cold water leeching, warm water leaching, or hot water leaching. Cold water leaching is the longest (7-14 days) but lets you have the lightest colored flour and also preserves more of the flavor of the acorn. Hot water leaching boils off a lot of the fat and taste and the acorns turn very dark but it can be accomplished in only a few hours.  Warm water leaching is a middle ground, also resulting in darker colored acorns but with more flavor than a hot leach.

For cold water leaching, you will pour off your starch and then add nutmeats to large jars and/or buckets.  They will need to be kept cool.  If you have a basement or cool porch, that will be fine, but if not, you will need to keep them in the fridge.  Twice a day, you want to pour off the water and add fresh water.  As you do this, the water will slowly leach the tannins from the acorns.  For high tannin acorns, this can take 7-10 days.  (The tannic water from early batches can be saved and used on sunburns or for tanning hides!).

A tip I want to share here is this–when you strain, you want to use some kind of fine mesh strainer so you don’t lose any of your acorn grits.  A real time saver for the acorn grits is to use large sprouting jars that have a built-in metal strainer.  You can also get cheap sprouting lids to go on a regular mason jar. This will allow you to easily drain the tannin water and add fresh without hassle.  For leaching acorn starch, you just have to carefully pour and not stir it up between water changes.  Your starch will leech much faster than your grits; you will know either is done by taste as well as the water staying clear.  The darker the water, the more tannins are present still.

For warm water leaching, pour off your starch and save it.  Add nutmeats to a good pan that will not singe (I used my cast iron dutch oven).  Put it on warm on your stove.  Pour off the water twice a day.  My acorns took about 5 days with this method.  You could also use a crockpot on a low setting or even do these on a woodburning stove.

For hot water leaching.  Pour off your starch and save it.  Add nutmeats to a pan and then bring to a light boil.  Boil for 30 min, then pour off the water into a very fine strainer and keep boiling.  Do this for a few hours, changing the water every 30 min, until the acorns taste good. My Northern Red Oak acorns take about 3 hours with this method.

Toilet tank method. A final method that you can use is the toilet tank method.  I was very excited about this method till I learned that the tannic acid can seriously degrade the inner parts of your toilet if you do it too often.  The basic process is to pour off the starch, then add acorn grits to a nut milk bag and then let them sit in the clean tank of your toilet.  Each time you flush, you flush the tannins away and add fresh water.  It’s similar in timing to a cold leech method. Try it and see if it works for you!

As you are doing any leaching method, keep tasting your nutmeats.  Eventually, they will taste good and not bitter, and that’s when you know they are done.  You want all of the bitterness to be removed–even a little bitter can make recipes less satisfying.

White oaks have the least amount of tannins and are almost edible right off the tree.  Red oaks (of many varieties, with the points on the leaves) typically have more tannins and take longer.  In my bioregion, Chestnut Oaks are ideal, as the nuts are really large and require less work to get more acorn meal.

Making Acorn Flour

You now have good tasting “acorn grits” which can be used immediately or dried for later use.  If you want to create flour, you will need to do another step.  For milling your flour, you want dried grits.  I put mine in the dehydrator for an evening on a piece of parchment and by morning, they are dry.  The grits can then be frozen for later use or ground up.  I prefer to do my grinding just before I use the flour, as it preserves the taste better.

Using a small grain mill, send your dried grits through.  You can also use a mortar and pestle at this stage to grind them up into flour.

Acorn Recipes

And so, after all this preparation, you have an *incredibly* sacred food that you can enjoy!   Here are two great recipes you can use that start with 1 cup of acorn flour.  You can use only acorn flour in these recipes, however, since its so rare and hard to produce, I find its better to cut it with regular flour–the delicious color and flavor of the acorns will still come through!

Sacred Acorn Bread

  • 1 cup acorn flour
  • 1 cup flour (white, wheat, or GF- I use organic bread flour)
  • 1/2 teaspoon salt
  • 1.5 tablespoons of  baking powder
  • 1 eggs (I use duck eggs)
  • 1 cups milk (you can use rice or soy if you prefer)
  • 3 tablespoons  sweetener (I use maple syrup, you can also use sugar or honey)
  • 3 tablespoons oil or butter

This recipe makes one loaf (you can double it to make two!)

Preheat your oven to 400 degrees. Grease a loaf/bread pan.  Mix your dry ingredients and wet ingredients separately, then mix them together, just enough to integrate. The batter will be thick and a bit lumpy–that’s ok.  Pour your batter into the pan and place in the oven.  Bake for 30-40 minutes, till a knife or toothpick inserted into the center comes out clean.  Pull out of the oven, remove from the bread pan, and then let cool for 10-15 minutes before eating.  The bread will keep for a week in the fridge or can be frozen.

This recipe makes about 12 pancakes.

Combine all dry ingredients then add wet ingredients slowly and stir till mixed. The batter should be smooth and pour well into the griddle.  If it’s too thick, add more milk. If it’s too runny, add a little more flour.  Prepare a griddle, allowing it to heat up.  Check your heat by putting a tiny bit of batter on the griddle and seeing how it does and then adjust your heat accordingly.  Lightly oil your griddle (butter, olive oil, bacon grease) and then pour out pancakes using a 1/2 cup measuring cup.  Cook on one side for 2-3 minutes, until you see bubbles rising through.  Flip and cook another 1-2 minutes.  Serve hot with fresh jam, maple syrup, and butter.  You can freeze the leftovers.

such a sacred place in human history has to do with this beautiful relationship between the near un-ending abundance they provide and the gratitude that people offered in return. As part of my fall equinox celebration, I make sure to take some time not only to eat of the fruit of the oak tree (through cakes and breads) but also, to offer something back.  I go to the base of the large oak and offer an acorn cake, build a shrine, and play some music.  And during the year, I visit frequently with the oak tree, spending time, communing, engaged in tree for a year work.  These kinds of reciprocal practices are as important as the technical skill of learning how to make food from acorns–they are the practices that allow you to deepen your relationship with all aspects of the living earth and engage in reciprocity.

Garlic Scape and Leek Scape Pesto and Preservation

Garlic Scapes and leek scapes are coming into full season here at the Druid’s Garden homestead, so I thought I’d share my method of preserving garlic scapes for use throughout the year.  After a few years of experimentation, I’ve perfected my process for creating a yummy pesto and preserving the pesto for a variety of uses.

Garlic scapes and leek scapes mature at about the same time, usually around the summer solstice where I live here in USDA Zone 6, Western Pennsylvania. Garlic is planted in October the previous fall, which allows you to harvest scapes and then later bulbs the following season.  Leeks have to be treated in a similar way to result in scapes–you won’t get any get scapes on leeks unless they overwinter.  This past year, I planted some last September and didn’t harvest them all, so they overwintered, so now they are growing delicious scapes ready for processing. If you don’t have scapes of your own, any farmer’s market is likely to have many scapes to purchase!  Buy a few bunches to enjoy and prepare.

In terms of flavor, garlic scapes have a spicy and complex flavor, a lot like garlic bulbs but a bit less pungent. The leek scapes are more mild and oniony with a hint of sweetness.  You can process them separately or you can just mix them together if you have both.

The way that I like to process scapes is a fresh scape pesto. A garlic or leek scape pesto can be made in a very brief amount of time and can then be frozen and stay good in your freezer for up to a year (if it would ever last that long!)

Pick your scapes or get them at the farmer’s market.  If you are picking, you will want to monitor them as they start to emerge.  You want to get them after they emerge for a few days and once they’ve curled over.  If you wait too long, they can get a bit tough and if they stay on the garlic plant long term, they will redirect a lot of energy away from your garlic bulbs, so they are necessary to harvest for a good garlic crop.

This recipe is greatly speeded up with a food processor.  You could do it by hand–chop the scapes up coarsely and then use a larger mortar and pestle or just finely chop with a knife.  Getting the pesto pulverized is the goal.

Ingredients:
–Garlic scapes
–Olive oil
–Salt
–Optional: parmesan cheese, pine nuts or walnuts

Your food processor can handle a good handful or two of scapes at a time.  I begin by loosely chopping the scapes (in 1/2 or 1/3), just enough to fill my food processor about halfway full.  From there, I pour in a few tablespoons of high-quality olive oil (usually about 3-4 tbsp for a half-full processor of scapes) and a pinch of salt.  Process until you get a thick green pesto.   You will likely want to stop the processor several times and use a spatula to scrape the bits of garlic off the sides. If the pesto is too runny, you can add more scapes, and if it’s too thick, add a bit more olive oil.  If you are processing a lot of scapes, you may have to do it in several batches.  Since I freeze my pesto, I am going for a thicker consistency.

You can add other ingredients as you see fit.  I like to add some parmesan cheese (2-3 tablespoons) and pine nuts to make a more traditional pesto.  You can also add lemon juice and tahini for another kind of twist (this turns it into a kind of dressing).

Preservation and Freezing

Once you have your pesto finished, you can freeze it for up to 1 year.  What I like to do for this is either use an ice cube tray or simply scoop your pesto out into 2-3 tbsp scoops on a cookie sheet lined with parchment.  I place either the trays or cookie sheet into the freezer for 12 hours.  Pull them back out.  Now you can place all of these in a freezer bag and pull out 1 or more cubes of pesto as you need them.

Pesto Uses

There are countless ways that you can use this garlic or leek scape pesto.  Here are a few:

Rice: Add 3 tbsp or more of fresh pesto to 3 cups freshly cooked rice–I like to do this when you fluff the rice with a fork after cooking and let it sit for 10 min.  This gives the rice a delicious garlic flavor.  You can also do the same with other grains like quinoa.

Hummus: Add 2-3 tbsp to a homemade hummus for an extra garlic or leek flavor.

Garlic dip. Mix 3-4 tablespoons with 1 cup sour cream and add salt and parmesan to taste.  You can also add a bit more fresh garlic or garlic powder to round out the flavor.

Meats and grilling.  This pesto makes an excellent marinade or baste for chicken, fish, and other meats.  You can use it in a variety of ways: on the grill, in the oven, as part of a sauce for over top meat, and more.  I like to add 2-3 tablespoons to meatloaf and/or burgers.

Pasta: Sautee zucchini or other fresh garden veggies until they are nearly done. Toss 3-4 tablespoons in the skillet and cook an additional minute.  Add a few splashes of cream and toss with pasta.  (Top with fish or scallops!)

Sandwich spread:  This pesto can be used on its own or mixed with mayo to create a delicious spread for any kind of sandwich.

Drizzle. Add a bit more olive oil and parmesan and use this as a drizzle over a variety of dishes.

Introduction to Sacred Gardening: Connection, Reciprocity, and Honoring Life

Walking into a sacred garden is like walking into another world, one full of joy, happiness, and wholeness.  Fruit hanging from happy branches, plants coming up from all angles inviting a nibble, a taste, a touch.  The pathways spiral and you get lost, looking at flowers, breathing in the fresh air, and tasting the tart berries on your tongue.  An indoor sacred garden is much the same – a bright window with a chair asking you to sit, stay awhile, and meditate with the plants (or even reach up and take a lemon-scented geranium leaf in your hand and breathe deeply).  Sacred gardens are places that are intentionally cultivated to be in harmony and balance, that are carefully tended by loving hands, and that offer many possibilities for spiritual practice and deeper spiritual connection.

 

It’s amazing to see that this year, so many new people are taking up gardening.  While I’ve written on these topics before (obviously, this blog is called the Druid’s Garden!), I’m returning to this topic today to offer an overall philosophy of sacred gardening that I hope can help you deepen your practice or start a new garden.  I’ve been engaged in these practices for over a decade, greatly aided by my permaculture design certificate and permaculture teacher training, which offered me much in the way of working with nature and developing deep observation, interaction, and ethical skills. I realize that other authors, especially those coming from different spiritual traditions, may have a very different take.  But this is mine :).

 

Sacred Gardening: A Triad of Reciprocity, Life Honoring, and Connection

To define sacred gardening, let’s start by looking at the definitions for the two terms.  A garden refers to a place where ordinary people can grow food.  Beyond that, gardens actually vary pretty widely based on the philosophy and practices of a gardener.  You can have gardens that are organic and holistically managed or those that are full of chemicals, weed killers, and poisons.  You can have gardens that are diverse and support life or those that are focused on keeping all life that isn’t intended out with some pretty violent means.  You can have large or small gardens, indoors or out.  They can be perennial or annual. Gardens, then, are defined by crowing food, cultivating plants for human benefit; they are often (but not always) very human-dominated spaces.

Sacred refers to something that is dedicated to a spiritual or religious purpose, something that is deserving veneration, being worthy of awe; and/or something that is entitled to reverence and respect.  When we think of something that is sacred, it is a special place where we offer honor, respect, and reverence.  Where we tend to our interactions and be intentional in our practices. For thinking about nature as sacred, several concepts emerge that are critically important to our discussion here they are: connection, reciprocity, and honoring life   It is in these three concepts that we can arrive at a useful definition of sacred gardening.

Actions here represent the third aspect that is important to define.  The ultimate point of most gardening is growing food, using whatever means an individual chooses.  What makes that gardening sacred is how the gardener chooses to interact with the land, the specific choices and behaviors that gardener engages in, and the intentions put forth into the space.  As with many things, while intentions matter a great deal, it is actions that determine our relationships and reality to the land. You can have all of the sacred intentions in the world, but walking into your garden with a backpack sprayer full of Round-Up sends a very different message.

 

At the same time as actions speak intentions into the world, it is also important to recognize that the physical and metaphysical are affected by each other and that there are many metaphysical aspects that can affect a physical space and vice versa.  Thus, we can think about sacred gardening as being about both inner and outer practices, practices that help not only support the physical presence of the garden but also the spirit.

 

Thus, I see three guiding principles, a triad in the druidic sense, that can help us with a full definition of this practice:

Thus, sacred gardening is a practice of cultivating a space (indoors or outdoors) that allows for not only growing food but also spiritual connection, reciprocity, and honoring life through both inner and outer practices.  In the remainder of this post, I’ll explore these three concepts and offer both “inner” (metaphysical) and outer “physical” practices

 

Connection: Building a Relationship

The first principle is connection.  Sacred gardening is connected gardening, where a big part of the goal of sacred gardening is to cultivate a deep relationship with the garden: which might include plants, soil, bird or insect life, stones, and other features.  Connection allows us to learn and grow in the garden by building a deeper relationship with that garden. Connection can mean many things in a garden setting, from developing a long-standing relationship with seeds that you carefully harvest and save each year to learning more about your space.   So now let’s look at three “inner” and “outer” connection practices.

Inner Connection Practices for sacred gardening. These three practices don’t have to be taken up all at once. I suggest you start with one of them and build to others over time–it can take years to establish deep connections. Think about inner connection work as taking a seasonal approach: each season you can grow and deepen your practice

.

  • Plant Spirit Communication. Learning how to directly communicate with your plants and the spirits of your land is a fantastic way to build deep connection.  By practicing and learning these communication techniques, you can learn from nature and grow in deep ways–as plants have been teachers of humans long, long, before recorded history.  Many of our garden plants, especially the culinary herbs like rosemary, lemon balm, and sage, have extremely long relationships with humanity and are almost always willing teachers.  For more on plant spirit communication techniques, see Plant Spirit Communication 1, Plant Spirit Communication 2, Plant Spirit Communication 3, and Plant Spirit Communication 4.
  • Meditation. Meditation techniques, including walking meditation and meditation where you are in stillness within the space, are excellent ways to build connections.  Consider doing your regular meditative practices in your garden as often as you can.  Even taking 5 or 10 minutes a day in your garden to meditate and connect can be a very positive experience–for you and for the garden!
  • Planting and Harvesting Rituals.  Relationships are built, in part, by recognizing the spirit in the plants and honoring that spirit.  I have found that planting, blessing, and harvesting rituals are a great way to build a spiritual connection between yourself and your garden plants.  Here are a few rituals for you to try: land blessing, planting ritual 1, planting ritual 2.

Outer Connection Practices.  Outer connection practices help signal to the spirits of the land your intentions.  Humans in this age often take the easy and quick ways out (e.g. plowing, pesticides, chemical fertilizers), and those easy and quick ways are often at a high ecological cost.  By taking things differently, and slowly, we can demonstrate sacred intent.

  • Supporting the soil web and soil health.   One critical physical connection in gardens is the soil and building soil health.  I would suggest as part of your connection to the garden, you work to attend to your soil–of which there are many different practices.  One of the most important is, for outdoor gardens, taking up the practice of no-till gardening, for example, using sheet mulch or hugelkultur approaches.  Supporting a healthy soil web begins with avoiding tilling a garden; tilling each year destroys the soil web and is quite destructive on the soil bacteria, nematodes, worms, mycelial networks, and more.  Adding rich compost (finished compost, coffee grounds, etc) and natural amendments help cultivate rich soil.  Here’s more on a few compost techniques: composting for city dwellers, composting options for outdoors, and vermicompost.
  • Observation and interaction. One of the first principles of permaculture design is a very useful one to list here.  To build a connection, you have to interact, to be present, and to do so frequently throughout the season.  Observe your plants as they grow.  Spend time with them, watch how they grow.  Look at them at different points in the season and at different times of day.  Take a full moon walk and see the glistening of the dew in the early morning.  This kind of walking meditative practice, where you are simply present with your garden, will offer you much.  More on observation and interaction. 
  • Seed starting and seed choices. Another connection practice focuses on seeds.  Seeds today can be difficult to navigate and choose because of the proliferation of GMO seeds (which I don’t recommend for sacred gardening)–this guide offers some suggestions for seeds.  Once you’ve selected some good seeds, you can start some for yourself (even starting a few will really give you a connection with the plant).  And I would suggest saving at least some varieties of seed from year to year.  For example, I have tobacco seeds that I use for ceremonial purposes and I’ve cultivated a many-year relationship with those seeds. At this point, each time I welcome up the new tobacco, it is greeting an old friend!

Connection allows us to begin to establish deep relationships with our sacred garden both in inner and outer ways.  I believe that connection is a basic requirement for sacred gardening–and the other two steps begin with this one.  Let’s now turn to the second principle–reciprocity–and see how it leads directly from connection.

Reciprocity: Giving Back

Reciprocity refers to the ongoing relationship that is mutually beneficial where each side continues to gain positive benefits from the relationship.  In the case of a sacred garden, abundant land produces yields to sustain you.  In the case of the gardener, the gardener does things to improve the diversity and health of the land and ecosystem–not only for the direct benefit of growing food but beyond.

Inner Reciprocation Practices help us to shift our mindset from those commonly assumed and indoctrinated in our culture to something more sacred and reciprocal.

  • Offerings and Gratitude.  In a sacred garden, whether it is indoors or outdoors, I like to have a space reserved for gratitude and practice gratitude regularly–this is the first step.  I usually build some kind of small shrine (whether that is on the windowsill or in a corner of a larger garden) and leave regular offerings. Offerings may be physical, musical, or spiritual (energetic).  More on gratitude practices from an earlier post.
  • Meditations and critical thinking work. Another good practice here is to spend time dismantling (though discursive meditation or other thought processes) the underlying assumptions about nature that we might not even consciously be aware of.  Our present culture has a constant assumption that 1) nature is there for our benefit and profit and 2) we can take from nature heedlessly and constantly.  These kinds of assumptions run through everyday life in unexpected ways and it can take some serious work to distance ourselves from them and to develop more healthy and productive beliefs about our relationship with nature.  For some good reading on this topic, I highly recommend Wendell Berry’s Unsettling of America: Culture and Agriculture and John Michael Greer’s Mystery Teachings of the LIving Earth.

Outer Reciprocation work helps us create gardens and plans that give back as much (or more) than we take, and establishes balance and harmony with us and the living earth.

  • Closed-Loop Systems and replacing what is taken. One of the reasons that chemical fertilizers are so popular is that as we remove nutrients from the soil, they have to be replaced (even so, we know that these kinds of farming techniques have caused a considerable nutritional decline over the decades).  Ultimately, the loss of nutrients permanently from the soil is a problem with reciprocation.  At minimum, we need to be replacing nutrients that are lost through erosion and harvest–but I’d argue that we need to do one better and add even more than was originally present. Practicing composting is one way, and for more radical folks, humanure and liquid gold offer ways to have a truly closed-loop system. Adding healthy amendments (I especially like to get coffee grounds from nearby coffee shops and interrupt other waste streams to divert to my garden).  Gathering up fall leaves and using them as part of your gardening practice is another resource.
  • Reduction or Elimination of Fossil Fuel Use. Another issue with reciprocation has to do with our over-dependence on fossil fuels, a dependence upon which is literally killing life on our planet and threatening our very existence as a species. As an act of reciprocation and acknowledgment of the problems with fossil fuel, I make it a point to do as much of my gardening by hand as I possibly can (even in a 1000 square foot garden!).  When I must make use of fossil fuels (such as to bring off-site compost to establish new beds), I make sure that I am making minimal and conscious use of these resources.
  • Scattering Seeds and Wildtending. As part of the gardens at the Druid’s Garden homestead, we have a “refugia” where grow a number of rare medicinal species and regularly scatter their seeds to wild and untended places, particularly places that have suffered ecological devastation after logging or other disruption (common where we live).  We grow both full sun perennials (like St. Johns Wort and New England Aster) as well as shade-loving woodland medicinals (wild ginseng, blue cohosh, black cohosh, ramps, goldenseal, bloodroot).  We also make sure to give seeds and seedlings out to others as much as we possibly can.  This is a direct response to many of these plants being lost in our local ecosystem and offers one way to give back.

 

Honoring Life through Sacred Gardening

When you start thinking about connection and reciprocation, this is all leading to the most important sacred principle of all: that of honoring all life.  This is tricky–gardens are traditionally human-dominated spaces and the goal is traditionally to grow food for humans.  When the potato beetles or squash borers come knocking, “honoring life” is probably the furthest thing from your mind as you literally watch your hard tended squash plants wither and die on the vine.  This is when you might be tempted to go to your nearest big box store for a chemical solution. But it is exactly these situations that test us as sacred gardeners, druids, and nature-honoring people.  Nature herself has ways of bringing those squash beetles in balance, and there are many things we can do.  The principle here of honoring life is so critical because it is this principle that is so broadly lacking.

Inner Principles focus on cultivating a diversity of life principles as part of our gardening practice.

  • A full season of blessing rituals. Offering regular rituals in the space that bless and welcome life is a great way over time to affirm your relationship with the sacred garden and raise positive energy for the space.  Here’s one such approach based on land healing.
  • Inviting others in. One of the ways to honor the life of your garden is by inviting others in, sharing with them, and helping others understand these basic principles.  Once you’ve done enough that you have something to share, invite others in to learn, grow, and enjoy the space.  I try to do this often, and as I offer a “garden tour” I share not only what is going, but the life-affirming philosophy that is present in the garden space and how we bring that into reality.
  • Permaculture ethics. Meditations on the three ethics of permauclture (earth care, people care, and fair share) can really help one develop a mindest that honors life and the resulting behaviors. I like to regularly meditate on these concepts and also create signs for my home that remind me of these concepts.

Outer Principles

  • Welcoming the diversity of life – pollinator hedges and more.  When designing for spaces and when planning, I think its important to design just not for what we want to eat but to welcome in diversity, particularly insect and amphibian diversity.  Insect diversity can help us with integrated pest management (below) but also just with cultivating spaces that have room for life.  A simple way to do this, for example, is to use a pollinator hedge–fill it with perennial species like borage, mint, comfrey, sage, milkweed, and more.  These pollinator hedges help welcome in insect life into your space and create habitat, food, and forage for non-human life.  Another common feature is a small frog pond and bee drinking area; a place for frogs, toads, and other amphibians to lay eggs, shelter from the hot sun, and get a drink.  A final thing here to consider is that life-honoring gardens are usually a little more “wild” than their human-dominated counterparts!
  • Integrated pest management. There are so many ways to deal with pests naturally.  Planting pollinator species, particularly the kinds that attract parasitic wasps, can help you with a host of pest problems.  Letting your chickens or ducks run through the garden.  Using cayenne pepper or copper tape to address slugs–the list goes on and on.  Most garden pests have several natural solutions in the short term.  In the long term, fostering a healthy ecosystem allows the predatory species of insects to handle the ones that could cause you trouble.  This approach does take more work and knowledge than a chemical one, and you are likely to lose some crops along the way–but in the end, it will be a much more life-respecting and affirming choice.
  • Making full use of the harvest. Another aspect of reciprocation is to use fully what is harvested and not contribute to food waste.  I think its really important that, in a time where up to 50% of the food grown is wasted, we make every effort to honor what was grown and produced in our gardens. This often means taking up some kind of food preservation, such as canning or drying produce.  Another way of thinking about this is also offering the harvest up to other life–e.g. if I can’t eat all my tomatoes, can some of my neighbors or friends enjoy them? What about offering leftovers to my chickens who convert that garden produce into eggs and manure?

Sacred Tree Profile: Birch’s Medicine, Magic, Mythology, and Meaning

When I was growing up in the Allegheny mountains of Western PA, and I was still a very small child, my father and I would seek out the sweet birch saplings.  A good sapling was tall and lithe, but bent easily.  Dad would bend a sapling down, and hold me on the end of it, letting me bounce up and down like a ride.  A few days later, when we walked back through those same woods, the sapling was back upright and growing tall.  It was no trouble for a birch to bend to give a small child a ride and then bounce right back up!

 

When I was 14, the a forest behind my house that I loved dearly was logged.  For many years, my sorrow kept me out of that forest–I didn’t want to see it cut, I didn’t want to see my many tree friends gone.  And when I started on the druid path, a decade later I finally went back into that forest. There, in every clearing, growing in huge clumps creating a thicket that was nearly impassable, were the black birch seedlings.  They ended only where the outstretched hemlock branches came, circling around.  For years and years, I would go into that seedling patch as they grew into saplings and cut black birch branches for teas, birch beer, cleaning, and medicine.  Now, only a few years later, the strongest grew tallest and many of the smaller ones died back–it is looking once more like a forest.  The birches have helped regenerate the land so quickly–in less than 10 years.  Birches are the true forest healers.

 

These two stories have much to offer those of us who are interested in the sacred power of the birch tree, a tree of new beginnings, regeneration, and illumination.  This is part of my larger Sacred trees of the Americas series–where I explore the various trees in the Eastern US for their many qualities to help those of us living here understand these sacred trees.  Previous trees in this series have included: Elder, Walnut, Eastern White Cedar, Hemlock, Sugar Maple, Hawthorn, Hickory, Beech, Ash, White Pine, and Oak. Growth and Habit

Birch trees of varying kinds are found up and down the eastern seaboard and midwest of the US, although the specific species and their range vary widely.  In the Alleghney mountains, we have two primary birch trees: black birches (sweet birch, betlua lenta), who smell like wintergreen, and yellow birches (betula alleghaniensis), who have beautiful golden curled barks once they reach about 15 years and older. In people’s yards, you might also occasionally see a river birch or white birch, but these are not our native birches.

 

Birches are pioneering species, often quickly being the first tree to regrow after logging or fire.  Because  of this, most birches come up in a large thicket, with intense competition, as my story above shares.  All of this quick growth comes at a cost, as most birch species are not considered pinnacle species, but rather, regenerative pioneers.  Given the widespread deforestation, logging, and other kinds of damage that forests are facing in the 21st century, we certainly need the power of the birch to regenerate damaged ecosystems.

 

Both of these trees grow 80 feet and up to 100 feet tall, and are usually short-lived (although there are cases of sweet birches living up to 250 years).  Often though, competition in birch forests eventually shade out older birch trees.  Birches of both species, here, can be found in a healthy forest along with beeches and hemlocks with understories of witch hazel or mountain laurel.  Yellow birches, in particular, like the same wet and cool forest habitats that Eastern Hemlocks do, and they can often be found growing along the same creek edges in moist forests.

 

Where I live, up in the ridges, you can find chaga mushrooms growing on birch trees.  Not only are birches themselves highly medicinal, chaga mushrooms are as well.  They look like burned and charred pieces of wood growing out of old birch trees.  Eventually, the birch will die from the chaga mushroom’s incursion–and at that time, all the medicinal aspects of either die as well.

Each birch that grows in the Eastern US has unique contributions in terms of human use. Paper birches (Betula papyrifera) obviously got their name from the paper-like quality of mature trees’ white bark.  This white bark was used by many different native american tribes for baskets of various sizes as well as arrow quivers, and canoes. As Eric Sloane writes in A Reverence for Wood, native americans along the eastern seaboard would choose a large paper birch tree and make two cuts down the bark of the tree on opposite sides.  In the spring, the bark would peel; they would cut away both sides of the bark–these are the two halves of the canoe.  They used roots from white spruce trees for lashing it together and used balsam fir resin and pine pitch to seal it. Albert Reagan describes in “Plants Used by the Bois Fort Chippewa (Ojibwa) how the Ojibwa used paper birch for dwellings, sweat lodges, canoes, containers, buckets for collecting maple or birch sap, dishes and trays, and coffins.

 

All birch barks, particularly paper birch or yellow birch, have excellent fire starting capabilities.  You can start a fire quickly from the outer bark of most birch trees.  Slices of birch bark are commonly carried and used in natural firestarting kits (such as those including flint and steel). They also are great when one is looking to start a camp fire! Even when fresh or wet, birch bark will burn, making it ideal for survival situations.

 

The wood of certain species of birch trees is pale and soft grained and indoor decorative and vaneer purposes.  Yellow Birch wood is the most sought wood from the speces and is used for a variety of indoor applications, including birch flooring, toothpicks, furniture, cabinets, and so on.  If you buy “birch” wood for your home, chances are, you are purchasing yellow birch wood.

 

Finally, birch species around the world have long been used as paper, even before the invention of paper in certain cultures.

 

Recipes and Treats

In the Appalacian mountains, sweet birch and yellow birch, have long been used for a variety of tasy beverages and treats because they contain methyl salicylate (the flavoring agent for wintergreen).

 

Birch Sap. Euell Gibbons in the classic Stalking the Wild Asparagus book has a host of advice describes birch trees as “natural woodland fountains” to be tapped and drank from in the spring.  And certainly, while this same advice can be applied to many of the trees that run (walnut, hickory, sugar maple, other maples, sycamore); none are quite as refreshing as the water with hints of wintergreen that come out of black birch trees. Birches start running much later in the spring, typically about 4 weeks later here in PA, just as the dandelions are starting to come out.  LIke the maple, birch sap can be boiled down to make a syrup, although the sugar content of birch is 100:1, meaning you will need to boil down 100 gallons of birch sap to get 1 gallon of syrup (sugar maple is a 40:1 ratio).   Like maple, I am sure anyone who drinks birch water will find it incredibly vitalizing and refreshing!

 

Birch Beverages. One of my favorite beverages is a simple black birch twig or birch bark tea.  The inner bark (cambium) has the strongest flavor. I suggest you boil fresh or dried twigs or larger shavings from branches for about 20 minutes with the lid on.  Strain, and add cream and sugar if you’d like.  It is a delicious wintergreen treat!

 

Birch Beer (Non-Alcoholic) and Root Beer. Birch beer refers to two different beverages–one fermented and one not.  The non-fermented kind can be made as a simple syrup.  In a large pot, combine birch twigs with 2 cups sugar and two cups water.  Put a lid on it and simmer it for 30 min.  Cool, and strain.  Take the resulting syrup and add it to simple seltzer water, and you have a delightful and refreshing “birch beer.”  Birch twigs are one of the three traditional ingredients for root beer, along with sassafras bark and either sarsipirilla or star anise.  You can make a traditional root beer in the same way above, with these added ingredients.

Birch Beer (Alcoholic / fermented).  Just as there are lots of ways to make a good non-alcoholic root beer, you can also make numerous variations on fermented or alcoholic versions.  I highly recommend Stephen Buehner’s Sacred and Healing Beers for some great recipes involving birch.  I’m going to share one I have tried only once, and it was a crazy experience.  This was adapted from Euell Gibbons Stalking the Wild Asparagus.   Get a 5 gallon bucket or crock, and put four quarts of finely cut sweet birch twigs at the bottom.  Combine 1 gallon of honey and 4 gallons of birch sap (or spring water), and boil for 10 minutes.  Pour this mixture over the twigs and cover it.  Let cool for 6-8 hours.  When its just warm to the touch, add a package of brewing yeast on top.  (The traditional recipe uses a piece of rye bread to float the cake of yeast, but I omitted this and it still worked).  Let it ferment (I used a lid and a fermentation trap, but the traditional recipe uses a cloth cover).  The cloudiness will go away after about a week and the beverage will settle.  Bottle and store in a cool, dark place.

 

White Birch Vinegar. I know it was traditional to make vinegar from white birch sap, but these traditional recipes seem lost (at least, I haven’t been able to find them in any of my resources).  however, Fergus the Forager in the UK has developed his own recipe (which appears about 2/3 of the way down his page).

 

Medicinal Qualities of the Birch

 

Matthew Wood notes in The Earthwise Herbal (Old World Plants) that Betula Alba is considered the official medicinal tree of the UK; while Betula Lenta is considered the official for North America. Black birch, with its saliclate-rich bark and oil of wintergreen, helps sooth sore muscles and achey joints. Wood notes that internally, birch tea functions as a diaphoretic (moving fluids out of the body and encouraging a sweat response) and diuretic (encouraging the flow of urine), both of these medicinal actions are useful in the case of atrophied or stagnant tissues (such as, as Woot notes, lack of digestion, kidney stones, bladder infections, arthritis, or poor circulation).

 

Wood also notes that traditionally in Europe, a combination of birch and nettle were used as a hair tonic.  For this, you can make a strong tea of the leaves and the branches, and use it on the hair.  Or, create a vinegar infusion of nettle and birch leaves or branches and use the vinegar as a hair rinse.  I’ve done this and it is wonderfully nourishing for the hair.

 

Wood also notes that leaves and twigs of black birch, in some American traditions, are gathered in midsummer to make a tea that is taken tonically.  The tea was particularly useful for cases of severe diahrehea or other gastrointestinal issues.  I have firsthand experience with this–birch is certainly soothing for a variety of GI issues (and also soothing to the mind).

 

Birch’s Magical Qualities

Birch is one of the 22 sacred trees in the celtic Ogham, the sacred tree alphabet.  It is not surprising that birch functions ecologically in the UK the same it does in North America, and likewise, the theme of renewal, protection, and new beginnings is consistent.  In the ogham, birch represents the letter “B” and is “Beith”, being represented by a single line extending to the right of the line in the few.

 

According to John Michael Greer in his Encyclopedia of Natural Magic, Birch species are used interchangeably in terms of magical properties.  Birch is represented by Venus in Sagittarius.  Birch twigs were used as protective in traditional western folk magic–a bundle of birch twigs along the edges of a property keeps away “evil forces” and bad luck.  Birch trees were tied with red and white cloth and were put near stable doors to drive away elves (who were known to knot horses manes and also tire out the animals).

Birch does not make an appearance in traditional American hoodoo, which is somewhat surprising to me, but given that most of it originated in the deep south where there aren’t that many birch trees, this makes sense.   However, birch does make an appearance in The Long Lost Friend, which is a 19th century grimoire from Pennsylvania.  Here is the full charm, focusing on a restoration for the limbs:

HOW TO CURE WEAKNESS OF THE LIMBS.

Take the buds of the birch tree, or the inner bark of the root of the tree at the time of the budding of the birch, and make a tea of it, and drink it occasionally through the day. Yet, after having used it for two weeks, it must be discontinued for a while, before it is resorted to again; and during the two weeks of its use it is well at times to use water for a day instead of the tea.

 

Birch in World Mythology

The birch features prominently in many world religions, particularly those of siberia and russia. Frazer writes in The Golden Bough about a Russian tradition involving a birch tree. This tradition that involves welcoming a birch as a guest into the house for the duration of Whitsunday (Easter sunday).  Russian villagers go into the woods, sing to the birch, and weave garlands for themselves before cutting it down and dressing it in women’s clothing with many colored ribbons.  They then feats, and they carry the tree back to their village, with more garlands, dancing, and singing, and set it up in someone’s house as a guest.  The villagers visit the tree for two more days.  On Whitsunday (Easter Sunday) they go to a nearby stream and throw the birch in along with their garlands. Frazer believes that this shows both the personification of the tree by Russians as well as the likelihood of throwing the birch in the stream as a raincharm.

In a second tradition, described by Czaplicka in Shamanism in Siberia,  birch is used as part of the preparation that Siberian shamans, called the Chukchee, use to gather their power.  They believe that new shamans, either male or female, must have a prepatory year or two where the new shaman gathers his or her power through various means including heeding the call of the spirits, gathering up tools, goes inward for ritual and fasting.  When the new shaman is ready, the elder shamans gather up birch seedlings, which are fashioned into a birch broom. A goat is sacrificed into a pot, and then the birch broom is dipped in the water in the pot and used to beat the back of the new shaman as a purification ritual. More birch trees are cut, with the approrpriate offerings, and then they are planted near the south-west corner of the shaman’s yurta.  Czaplicka writes, “This birch represents symbolically the porter-god who allows the shaman ingress into heaven. It points the way by which the shaman can reach the sky, and remains permanently in the yurta as a sign that the dwelling is that of a shaman. The other birches are planted in front of the yurta in the place where sacrifices are usually offered, in the following order, from west to east”

 

Birch in Native American Mythology

 

In American Indian Fairy Tales by Margaret Compton, the story of the Fighting Hare features the uses of birch.  The prince of the hares, who is very much a trickster, goes on a journey after having his feet burnt by the sun.  He encounters many beings who try to kill him, but each time he bests them instead and kills them through his magic, plotting, and scheming.  He eventually comes to the edge of the world where a cliff of trees stands.  He asks each of the trees what they are good for. The ash says, “From me is taken the bow that speeds the arrow in its flight.” The birch says, “My bark is for the picture-writing of the people.  How, but for me, could one Chief talk to his brother who lives by the distant river?” The oak says, “I shelter the great warriors.  I mark the spot for their councils.  From my boughs are made the swift arrow that bring food to the feet of the hunter and carry the death to his enemies.  This not only shows the birch as a use for a writing system for records and history, but as a way to keep the peace among the tribes for communication.

In another Ojibwe legend titled “How the birch got its burns” Waynaboozhoo’s grandmother asked him to find the fire that the Thunderbird kept in the west.  He goes on a journey to do this, and disguises himself as a small rabbit.  When he gets to the Thunderbird’s home, he asks to be let in because he is cold and hungry.  Thunderbird agrees.  When Thunderbird is not looking, Waynaboozhoo steals Thunderbird’s fire by rolling in it and keeping it on this back.  Thunderbird is furious, and flies behind Waynaboozhoo trying to sear him with lightning bolts.  A birch tree offers Waynaboozhoo protection, and the white birch is seared many times by Thunderbird’s bolts, but Waynaboozhoo stays safe.

In the “Old Man and the Lynx” a strong birch tree helps prevent the Old Man from blowing away.  Birch trees in this story and others are known to have deep roots that will not blow away, unlike other trees.  Old Man is being blown by a harsh wind and has nothing to hold onto–finally, he comes to a birch tree and can hold on till he is able to calm down the wind.  In thanks for the birch’s protection, Old Man marks the tree in a long line with his knife.

In “Why Raven’s Feathers are Black”, Raven is a trickster who often steals from other animals in the forest.  He also has beautiful white feathers.  A little yellow bird is stolen by Raven and taken to his nest in the pine tree, and a wood worm decides to help her. Wood worm first binds together Raven’s feet with birch bark and moss while he sleeps and frees the yellow bird. Then wood worm brings more moss, leaves, and birch bark and surrounds the pine tree where Raven’s nest is.  He sets it on fire.  The other birds choose the birch bark is used to start a fire at the base of a great pine tree, and Raven eventually escapes, but his feathers had so much smoke that they were turned black.

Birch’s Magical and Divination Meanings in the Americas

The mythology and stories throughout the world offer some fairly consistent representations of birch as a tree that offers much to humanity. Here are some general meanings we might take from the birch:

 

Illumination. The birch’s connection to both fire and fire starting of all kinds, signals the birch tree’s tie to illumination, insight, and bringing light back into dark places.  That birch is also associated with the spring and new beginnings in the traditoinal celtic lore further strengthens this connection.

 

Renewal & Purification.  Birch is strongly a tree of renewal–for the landscape and damaged forests, for the human body when it is ill, and in a magical sense.  Birch offers the properties of renewal and rest both in inner and outer ways–as the birch works to renew forests, she also renews the light and spirit within each of us. Like the birch that can so easily bend down and accept a child to play, the birch teaches us many lessons of renewal through her physical being. Purification goes hand in hand with renewal, and we see this strongly both in the birch’s medicinal qualities as well as some of the stories of the use of birch as a primary purification tool for new shamans.

 

Protection. Birch is used as a protective charm and wood in many different cultures, including in the americas.

 

New Beginnings. Many of the stories feature birch as a new beginning in some way–birch marking a rite of passage, birch burning and allowing new things to grow.

A Druid’s Guide to Herbalism, Part II: Preserving and Preparing Sacred Plant Medicine

The moonlight shines through the window in my kitchen as I carefully use a mortar and pestle to grind dried herbs for making tea.  Candlelight softly illuminates the space, and I have my recipe book with me, ensuring that I record everything that I’m doing for future use. Magic is in the air; working in a sacred space at a sacred time on the Fall Equinox ensures that these medicines will be potent, effective, and magical. On the counter, I’ve already finished my fresh New England Aster flower tincture; this keeps my lungs in good health and helps me manage my chronic asthma without pharmaceuticals. A pot of olive oil is infusing with herbs is on the stove; I am getting ready to add beeswax and pour it off into small jars.  This healing salve will be for friends and family as Yule gifts.  The kitchen is bursting with good things and healing energy.

In last week’s post, we explored some different ways to interact with and harvest plants: an animistic worldview that recognizes and honors plant spirits, planting and harvesting by the signs, and preparing for harvest through offerings.  In this week’s post, we’ll talk through different ways to preserve and prepare sacred plant medicine– so let’s get started!

 

An Herbal Sacred Grove

Before beginning your plant preparations, I would suggest setting up a sacred space (what we druids call a Sacred Grove). You can create a sacred space in which to prepare your sacred plant medicine. I offered details for one way of doing this in my earlier post on Hawthorn tincture creating.  You could also do so using an existing grove ritual (from OBOD, AODA, etc) or by creating your own.  I love to do this and I have found that it really adds to the magic and power of my plant preparations. For sacred plant crafting, I typically use a modified version of AODA’s solitary grove opening, including the Sphere of Protection.  The Sphere of Protection is highly adaptable, drawing upon the four elements and the solar, telluric, and lunar currents (three realms of spirit).  For plant medicine, I will use something like this (depending on the plants I’m working with at that time):

  • East/Air – New England Aster
  • South/Fire- Sassafras

So my opening might look something like this:

  • Declare the intent of the ceremony
  • Declare peace in the quarters (part of the druid tradition)
  • Druid’s prayer / Druid’s prayer for peace (part of the druid tradition)
  • Sphere of protection; sealing the space
  • Offering to the spirits of the plants

Once the grove is open, I can begin my plant preparations, recognizing the sacredness and magic in this work.

If you plan on continuing to do sacred herbalism, I would suggest developing your own version of your sacred grove opening.  It can be dedicated to certain plants or activities, be done in a special room at a special time, etc.  The important thing is to make it matter for you!

 

Garbling

Once you have harvested a plant, you should engage in what is known as “garbling.” Garbling has both mundane and magical qualities.  On the mundane level, this basically means going though the plant material, cleaning it, removing bugs or soiled parts, and making sure you don’t have parts of other plants (like blades of grass) in there. As part of the garbling process, if you are drying your plants, you will want to remove any thick stems–this can prevent plants from drying thoroughly.  On the magical level, this process lends your energy to the plants you’ve harvested.  Feel their energy, attune with them, and do a bit of energy exchange with the plants you harvested.

 

Drying Plants

Plants need to be very dry if they are to stay fresh and preserved over a period of time or if you are going to use them in an herbal preparation. One of my favorite tools is a portable herb air drying rack. Its a mesh column with tiers where you can lay many fresh herbs.  If you hang this up in your house or porch, your herbs can be dried in a matter of days and not use any fossil fuels.  Other options include an electric dehydrator (sometimes necessary in places or times of high humidity).  If using a dehydrator, make sure you keep it on the lowest (herb) setting. Solar dehydrators (such as this design here) are another good option.  The oven is not a good option for most plants for drying, particularly leaf and flower parts; the oven starts out about 100 degrees Fahrenheit hotter than you want for your plants and you will likely burn them. You can use the oven to “finish off” already mostly dry material, however.

 

If you feel your plants and they still feel soft or cool, they are likely not yet dried enough for proper storage.  This is particularly a problem in high humidity areas. You might finish them off for 10 min in the oven at the lowest setting to make sure they are super dry.  Then place them in a mason jar (which has an excellent lid that won’t allow any bugs, dust, etc, inside and place them in a cool, dark place.

 

Typically, drying directly in the sun is not a good idea.  The sun destroys many of the volatile oils, which is where a lot of medicinal content is held in the plants.  So air dry them, but never in direct sunlight. (This is also why you store plants in a cool, dark space–because sunlight is damaging to the longevity and potency of dried herbs and tinctures). You can use the sun’s energy for other kinds of preparations, however!

 

Specific Plant Preparations: Teas, Tinctures, Oils, and Salves

 

Healing Plant Tea (Infusion or Decoction)

If you are drying plants and storing them, you are already ready to make tea. Tea is best used for working on the internal systems of the body; the gut and GI system can hugely benefit from healing teas.  For teas, I usually grind up my plant matter a bit further (in a mortar and pestle, or cut them up further with herb scissors).  This is done so that the water has more spaces and opportunities to extract the plant matter. There are two kinds of herbal teas that you can make: infusions or decotions; the kind you make depends on the plant matter you are working with.

 

Infusions are created when boiling water is poured over plant matter and allowed to sit for 5-20 or so minutes (what we typically know as ‘tea’ using a tea bag).  This method is best for leafy plant matter and flowers.  When you make an infusion, make sure to cover the tea so that you are not losing the volatile essential oils through the steam (that’s often where the most concentrated medicine is).  The longer you let the tea sit, the stronger it will be, and for medicinal teas, 10-15 minutes is a good amount of time.  You can use tea strainers or purchase single use tea bags that can be sealed or tied.  I prefer the metal tea strainers as I make a lot of tea and don’t want the tea bag paper to go to waste.  Good plants for infusion teas include: mints, rosemary, lavender, monarda, lemon balm, chamomile, catnip, nettle, and more.

 

Decoctions are created when you boil your plant matter, with a lid, in the water, again for 10-20 minutes.  These are best for roots, barks, nuts, and other tough woody plant matter as it takes more time to extract the medicine from roots and woody material.  A hard boil of a plant would destroy leafy bits and flowers, so if you are combining woody bits or roots with flowers, add your flowers after you are done boiling and allow them to sit (again with the lid on) for 10 or so minutes before drinking your tea.  Plants for decoction: sassafras root, wild cherry bark, echinacea root, yellow dock root, etc.

 

You can also add the energy of the sun and/or the moon to your tea:

Lunar tea: A great way to bring the energy of the moon.  For infusions, pour boiling water over your plant material and allow it to sit in a jar with a lid in the moonlight.  For decoctions, boil your plant matter and add to a mason jar with a lid.  Let it sit overnight in the moonlight. Drink the next day and enjoy the energy of the moon.

 

Solar tea:  Some days, the sun is hot enough to do its own infusion of leafy or flower plant material.  Place your material in a large mason jar (I like to use the half-gallon mason jars) and sit it in the sun.  If you want to make your tea stronger, consider putting your jar on a reflective surface (like in a big stainless steel bowl) to increase the heat.  For decoctions, I like to soak my plant matter in advance in the sun (in a pot or jar) and then do the final boil.

 

Finally, you can make a ritual out of drinking your tea: perhaps it’s what you drink each morning when you rise, or each evening as you are getting ready for meditation.  I like to make my tea and then walk out on our land here, communing with the plants both within the tea and without!

 

Healing Plant Tincture (Alcohol, Vinegar, and Glycerine)

Tinctures are potent extracts that turn the plant medicine into a more easily accessible form by the body, and are used for an extremely wide range of uses (daily strengthening, cleansing, supporting a healthy fever, gut issues, etc). Tincturing can be a fairly complex and involved process if you want it to be (I wrote about it in much greater depth on my herbalism blog), but we are going to use a simple folk method here.  A tincture suspends healing plant matter in a menstra (in our case, alcohol, vinegar, or glycerine) which makes the medicinal properties more readily available and also preserves them for a period of time (for vinegar and glycerine, about a year; for high proof alcohol, indefinitely).

 

Alcohol tinctures. Your goal for most plant matter is to have at least 25% alcohol for preservation purposes. Start by chopping your fresh or dried plant matter finely.  If you are using fresh plant matter, you will want to start with a higher proof alcohol (as the plants add some additional water). You can use a “neutral” spirit; vodka is a typical choice for most herbalists.  An 80 proof vodka is 40% alcohol, so even if your plant material has a bit of water in it, you should still be above 25% alcohol when you are finished. Place your chopped plant matter into a jar, and weigh it down with a smooth, clean stone that you have scrubbed well in advance.  You can do this without the stone, but the stone really helps keep all of the plant matter submerged, which prevents mold and other issues.  Pour your alcohol over it and store in a cool, dark place for one moon cycle.  Strain your material, and enjoy!  Tinctures can be sweetened with honey or maple syrup to make them taste a bit better (or just take them in a glass of water).

 

Glycerine tinctures (glycerites). Glycerites have a shelf life about a year, and often taste a lot better than alcoholic preparations.  They are also very good for children or people who cannot have alcohol (such as those in recovery). Purchase some vegetable glycerine (in the USA, if you find “USP Glycyerine” the USP stands for the United States Pharmacopeia, which means it is a pure and standard formula). Water the glycerine down by 50% and add your plant matter, usually dried (or water it down less if you are using fresh).  Give it all a good shake and let it sit for one moon cycle (but not more), shaking it at least once a day.  Strain and enjoy.

Vinegar tinctures. Vinegars are best for food-based material that you want to build into your cooking and consumption regularly and can be a great addition to an herbal medicine cabinet. For example, my father needed to have regular hawthorn in his diet and he enjoyed eating vinegar and oil on his salad, so I prepared him a hawthorn-infused apple cider vinegar that he could use each day with his meal.  Vinegar tinctures are made similar to the others–start with a high quality vinegar, preferably organic.  Chop up your plant matter finely and add it to your jar.  Let the plants infuse in the jar for one moon cycle, strain, and enjoy.  One more common vingear based preparation you may have heard of is “Fire Cider“; it is a vinegar-based tincture of ginger, onions, garlic, horseradish, and herbs that is used for healing purposes.

 

Some Plants for tincturing: Monarda (bee balm, antimicrobial), Nettle (anti-histamine, adrenal support), Goldenrod (anti-histamine, anti-inflammatory), Culinary Herbs (rosemary, sage, thyme, oregano – good for the vinegar infusion), Chickweed, Wild Yam.

Infused oils are topically used primarily for wounds/stings/bug bites, for joint/muscle issues, or for varicose veins and other skin issues. Herbalists have a multitude of ways to make an infused plant oil, and I will share two of the most simple ways. Start by thoroughly drying your plant matter (see instructions above) and chopping it finely; if you are in a hurry, at least “wilt” your plant material for 12 or so hours by letting it sit on the counter before using it. Choose a good quality oil, I most often use organic olive oil as it is readily available.  Coconut oil is another good choice, but only if you will be keeping it in a temperature controlled environment due to its low melt point.  Otherwise, at some point, your infused oil may be solid or liquid (and this is even more important if you plan on making it into salve).

 

Pour the oil over the plant matter, making sure the plant matter is thoroughly saturated.  Leave in a sunny window or on the porch on warm days for one week, then drain and store in a cool, dark place for use.

 

Alternatively, you can use a double boiler on a low setting and infuse the oil for 12-24 hours.  Ensure the oil doesn’t get too hot–if your plant leaves turn brown and crispy, you likely made it too warm and boiled away the medicine. Thoroughly strain your oil with a small strainer or cheesecloth, and store in a cool, dark place for further use.

Make sure your oil is completely strained; small bits of plant matter can make it spoil much faster.  Also make sure there are no water bubbles in it; they will appear on the bottom and look like little clear or brownish bubbles. These will also make the infused oil spoil much, much faster.

 

Healing Salve

To make a salve from infused oil, begin by placing your strained oil into a double boiler and heating it up.  Add approximately 3 tbsp of beeswax (shaved or grated finely) per cup of infused oil.  As the oil heats up, the beeswax will melt. You can add less beeswax for a more liquid salve or more beeswax for a harder salve.

 

To test the consistency of your salve, place a spoon in the freezer and then pull it out and put a few drops of your salve on the spoon to see its consistency.  When you are happy with the consistency, you can add any additional essential oils (in small quantities; I like to add sweet orange or rosemary oil to make it smell nice).  Pour your salves into small jars or tins. Let them cool and then label appropriately.

 

Plants that work well for salve (in any combination): Plantain (skin healing, drawing), Calendula (skin healing), Comfrey (wound closing), St. John’s Wort (inflammation), Ground Ivy (skin healing, drawing), Chickweed (skin healing), Goldenrod (inflammation).

 

Conclusion

All summer long, we have had so much rain and thunderstorms.  Penn Run, a small creek behind my home, once again overflowed, raising several feet for a time.  When the waters had subsided, I was delighted to find delicious wild apples lining the banks–the river had carried them to me as a blessing for this wonderful Fall Equinox!  It reminded me that I have been wanting to write of the apple–of her magic, of her folklore, and of her abundance=. And so today’s post explores the delicious, nutritious, and extremely magical apple tree (pyrus malus, malus spp.) and the blessings that she offers. This post continues my longer series on Sacred Trees in the Americas, where I explore the many aspects of trees native or naturalized to the Eastern and Midwest regions of the US. Previous entries have included Elder, Walnut, Eastern White Cedar, Eastern Hemlock, Sugar Maple, Hawthorn, Hickory, Sassafras, Beech, Ash, and White Pine.

 

About the Apple

Nearly everyone knows about apples, but often, the common experiences with apples are what people see in the grocery store–a select number of perfectly waxed and shiny varities–golden delicious, gala, or granny smith. These commercialized varities are only a tiny piece of the incredible apples that you can find in the wild.  Another thing that I’ve heard regularly is that people believe that crab apples (and wild apples in general) are poisonous and cannot be eaten.  There is nothing further from the truth–wild apples are wonderful, rich, sometimes tart, sometimes mealy, but often a surprise and delight to those who seek them out.  Apples of all kinds are easy to find, abundant, and–this time of year–completely free!

 

Apples will typically bear every two years (biennially) while other apples are bred to offer fruit every year. In the spring, apple blossoms fill the air–each mature apple can produce anywhere between 50,000 and 100,000 blooms, which can be smelled up to 1/3 a mile away.  These blooms offer a critical early nectar source for bees and other insect life.  Less than 5% of those blooms will ever set fruit; some are unpollenated and others don’t form properly.  Sometime in June, the “june drop” occurs where the tree drops any fruit that isn’t setting properly.  By late August or early September, the tree fruits and the fruits grow ripe and sweet.

 

Of Apples and Ancestors

John Eastman, in Field and Forest, has much to share about the apple tree.  he notes, as any wild food forager will attest, that commercially grown apples are grafted and carefully managed, those growing in the wilds offer much wider varitey.  He notes that orchards allowed to go wild or otherwise abandoned will, over time, change their apple composition and may end up “reverting to more ancestral types of fruit.”  I love this idea and vision–and certainly, a stroll through the country to find wild apples this time of year connects us back to the ancestral, magical traditions surrounding so many aspects of the apple tree.  Apples offer us much in terms of ancestral traditions.

 

One ancestral tradition closely tied to the apple here in the US was Johnny Appleseed, a historical and legendary figure who spread apples all over the US.  Eastman notes that some crab apples do appear native to the US, but nearly all of the apples we have were spread by Appleseed and others looking to make “cider” (and by that, I mean hard cider!)

 

In Eric Sloane’s A Reverence for Wood, Sloane writes about the important place of apples in Colonial America.  Because the early colonists were told not to drink any of the water, they depended on drinking cider (the alcohol of which would be safe).  Even small children were raised drinking apple cider as their primary beverage. Even late into the winter, apples from root cellars were brought out and made into many things–this made the apple one of the primary foods and drinks.  Unlike today’s limited varities, Sloane notes that in the 1700’s, there were close to 2000 known varities of apples.  Most orchards were planted with many varities to ensure an extended harvest, and different kinds of apples had different purposes (cider apples, storage apples, fresh eating apples).  Special care was taken both in the harvesting and preserving of apples; Sloane notes that special apples were often hung carefully by their stems in the house or packed away in straw for the winter months.

 

And of course, one of the longstanding ancestral traditions is the wassail. I’ve written fairly extensively about the “wassail” traditions surrounding apple.  Because of the importance of the apple as a staple food and drink crop, people would go out to the trees in January 6th or 17th (old 12th night, depending on how you calculate it) to bless the trees, make offerings to the trees, and drive evil spirits away from the trees in order to ensure an abundant harvest for the coming season.  Make no mistake–these wassail traditions were magical traditions focused on bringing good health, fertility, and abundance to the land–and they are very old ancestral magic that has begun making its way back into our modern era.  Here is another classical interpretation on the wassail.

 

Wild Apple Foraging

Sometimes, you can still come across these old and abandoned apple orachards and have a very good time as a wild food forager, harvesting hundreds of pounds of apples of all shapes, colors, and varities.  But for me, foraging for apples begins not in the fall at the time of harvest, but in the spring. Apples are easiest to spot when they are in bloom in their swath of pink, red, or white blossoms.  I note where these apples are and then, later starting in late August or early Stepember, I return to these trees for a potential harvest.  Harvesting apples is simple–as soon as the tree is ready to give you its fruit (as in, the fruit is easy to pull from the tree and ready to drop) the apple is ready to eat.  Try many apples in the wild–you will find some incredible varities and tastes!  Some of the wild apples can certainly be tart, however, in “Stalking the Wild Asparagus” Euell Gibbons offers a suggestion of waiting till frost sets in for some wild apple varities, as the frost will sweeten their otherwise tart taste. Good, tart crab apples will sweeten when cooked (and make some of the more delicious apple pies or sauces that you will ever eat!)

Gibbons suggests the following recipe for wild apple jelly.  He suggests gathering up wild apples and quartering them, removing any insect damage, worms, etc.  Put these apples in a pot and cover with water, simmering for 20 min with the lid on.  Let this cool and strain the juice.  (I will add that if you have a small fruit press, you can even press these apples–after cooking they will be easy and you will get more flavor).  This juice can be used to make a jelly.  I like to use Pomona’s pectin (a low-sugar pectin) to help this set and add 1/2 cup honey to 4 cups juice for a delightful wild apple jelly.  I’ve also shared a few previous posts on making delicious things with apples, such as applesauce and pressing apples into cider. 

 

If you do come across an old apple tree or old orchard in the US on the East Coast, look around nearby.  You will almost always find an old foundation from the people who likely planted that apple tree.

 

Apples and  Modern Folklore and Herbalism

Unlike many of the previous trees covered in this series, which are largely unknown to the average person, the apple has a special place even in present day culture. We have many references to the apple in present society–people are either good apples or bad apple. One bad apple will spoil the bunch. Newton was apparently hit on the head with an apple and that led to his insight on the theory of gravity. The Buddah gained enlightenment under an apple tree–as did the Merlin in some Arthurian folklore.  Snow white was, of course, seduced with a poison apple. An apple a day keeps the doctor away.  In this folklore, good apples are tied to insight, fertility, and health, while bad apples will lead to ruin and poor health.

 

Apples and Healing

“An Apple a Day keeps the doctor away” is a common saying–but this saying has quite a bit of truth. As far back as Culpepper, we have records of apples being used for a variety of healing uses. Culpepper offers a range of uses, from using them to soothe “hot and bilious stomachs”, to roasting them and adding frankincense to a poultice to address pain in the abdomen or side.  He notes their generally cooling quality. He also notes that an apple syrup will surely assist with “faintings, palpitations, and melaoncholy.” It seems there is very little that those in the western world in the middle ages and Reniassance.

 

Today, likewise, herbalists recognize the importance of apples to health.  Matthew Wood, in his Earthwise Herbal (Old World Plants) notes that apples are a “true folk medicine” in that accounts of what apples can do in terms of health vary widely.  Each herbalist, therefore, had his or her own personal experience with how to use the apple.  However, Wood notes some consitenencies–apples are cooling and moistening (reflected in what I just wrote above about Culpepper), apples before they are ripe have an astringent quality (making your mouth pucker).  Therefore, herbalists today use apple for a variety of “hot” conditions such as burns, fever, headaches, and kidney strain/pain.

 

Apple in the Western Esoteric Traditions

The Apple has a privledge place in the Western Esoteric Traditions and has a wide and varied interpretation of its magical powers and uses.  Here are some highlights:

 

Love magic:  In the Encyclopedia of Natural Magic, John Michael Greer notes that apples are in the sign of Venus (in Libra) and that they were most typically used in love magic (love drawing). This association goes back to at least Roman times, according to this source, where figs (known as “love apples”) eventually had their meanings transferred to apples on trees. This is also consisten from the American Hoodoo tradition, where Cat Yronwode says that apple is used as a “sweetener” to atract someone to love, but also for sweetening up customers or bringing in business.

Expelling evil.  In “Ancient Legends, Mystic Charms, and Superstitions of Ireland” from 1887, a spell about apples and elder is written, “IT is said by time wise women and fairy doctors that the roots of the elder tree, and the roots of an apple tree that bears red apples, if boiled together and drunk fasting, will expel any evil living thing or evil spirit that may have taken up its abode in the body of a man.”

 

Apple as a Magical Key or Gateway. In “The Glass Mountain” from The Yellow Fairy Book, a book of celtic fairy tales, there is a golden apple tree that sits on top of a glass mountain. This apple grants people entrance into a splendid castle with stores of food, riches, and a princess waiting to be rescued by a valliant knight.  The apple tree’s apples are gaurded by an eagle. A young man makes it up to the apple tree and battles the eagle; he wins but sustains a wound.  He places the peel of one of the golden apples on his wound, and then goes to the castle to claim his bride.  This is but one of many Celtic tales that demonstrate apple as a gateway; the very famous Fairy Faith in Celtic Countries also describes apple branches as gateways to the otherworld.

 

Eternal Youth and Eternal Life. In the Norse tradition, there is an apple tree in Asgard that offers eternal youth to any who eat of its fruit. Iduna, a Goddess, tends the tree–and only with her tending do the apples grow.

 

Apple and Healing  Long Lost Friend (an American Grimorie of PA Dutch Folk Magic) suggests that the roots of an apple tree are good for curing a toothache, by way of using a needle, blood, and some tranfserence magic. This is but one of many ways which apple is seen as a healing tool for both mundane and magical reasons.

 

Apple’s Protective Nature.  As nearly every pagan can attest, cutting the apple in half horizontally reveals a pentacle.  Apple carries so much magic within her that it is literally reflected both in her fruit and in the blossoms–which form five petals.

 

Apple in Native American Traditions

A lot of Native American lore involves apple trees, but not necessarily magical qualities of them. I think that this was partially because apple was brought to the New World long after many of the mythologies were established. There are a few things present, however:

 

Apples as a fragrant blessing. One legend, from an unknown tribe, surrounds the fragrance of apple blossoms and flowers. In this story, a baby is carried by a panther under blooming apple trees, a baby who turns into a woman that “falls from heaven.” The villagers take her in, and she loves the flowers and blooms more than anything.  She dies and plans on moving onto the little people, but decides to first bless her village that gave her so much–so she makes the blooms, including the apple blooms, more fragrant.

 

Apple as a Gateway to the World.  In another legend from the Huron tribe, the world is divided into two parts. One part is the “sky world” where the people lived, and the second world is the lower world, which was all water, where the animals lived. A girl who lived in the sky world was tired and went to take a nap underneath an apple tree.  A hole appeared under the tree and she fell through along with the apple tree to the lower world below. She is caught by two swans, and then big turtle brings all of the animals together. They decide to bring the soil up from the depths of the water to create an island for her to live on. This doesn’t work well, but eventually, the animals spread seeds and dirt onto big turtles back, and the girl lives there. Now, the whole world rests on big turtle’s back, which is why this land is called “turtle island.”

Apple’s Magic and Meanings

Apple’s Blessings.  Apple offers blessings, abundance, fertility, and magic in nearly every story she shows up in.  Apple’s blessings are apparent from her giving nature–apples can sustain people through difficult winters, they can be baked, fermented, dried, and made into wonderful and delicious foods that nurture and heal as much as they sustain.  Apple offers us connection to our ancestors and our future through her nurturing spirit, blessings, and wisdom.

 

Apple as Healing and Life-Giving.   The “Golden Apples” present in so much of the magical lore demonstrate the life-sustaining and longevity properties of apples.  Magical golden apples offer keys to eternal youth, eternal life, and healing.

 

Apple as a Gateway.  Like her sister the hawthorn (although to a lesser extent), apple trees can be gateways to other realms and experiences–the holes that open in the ground, the apple as a key to the castle, the sleeping person under the apple that is transported to a new place.  Apple offers us these journeys and experiences–in a much more gentle way than Hawthorn.

 

Whew! After all of that research and fun, I think I’m off to make use of these “flood apples” and bake myself a nice apple pie with these beautiful “flood” apples.  And to you, dear readers, I wish you an abundant harvest at this beautiful fall equinox.
